It's a dinner, a dip, a filling, a side salad or a grazer snack.
Explanation under this line to not fill up your dashboard.
I drop three cans of rinsed beans/grains in a bowl. Add whata ever veggies I find, but you can buy them precut too.
Add some (non dairy) dressing or make your own with acid and oils. I use lime, olive oils, vinegar and whatever hot sauce looks funky/is cheap.
It is 10 to 30 minutes of work including clean-up and for me costs around €10 with some veggies to spare (depending on how much cutting you are doing). And that is almost a week's worth of food with fiber, protein, vitamins, calories and fats. And you're gonna need all of those to fuel a struggling brain and body.
Texture issues? Use different textures. There's a world of difference between corn and chickpeas, as opposed to lentils and quinoa. Beans that have only been boiled in the can also feel a lot less grainy.
Hyperfocus food? Honestly it's kinda perfect for this. Because you make one big bowl with everything you need to survive that you could just eat morning night and day that has space for lots of ingredients you might sucome to. Once the hyperfocus turns bad, pack up whats left for family/friends and the million cans of beans you bought at the start of the hyperfocus are shelf stable and good for other stuff.
Don't want to feel like you're eating the same thing every day? Variety! This works best by chopping the veggies smaller or grating them, but you can eat it with a bag of chips as a dip or as taco/burrito filling. If you use a neutral vinaigrette, you can blend some up into sauce to add nutrition to other meals or just add different sauces/herbs and spices each meal. You can eat it in so many ways.
Can't chop veggies? Buy them prechopped and just toss it all in.
I know this has been a thing for a while, but I'm surprised I've never seen it as an ADHD or autism hack. It's so fucking hard for me to get enough nutrition and it's always been a struggle, even though it is so fucking vital. My brain is having an even harder time if it's not fueled, my meds don't work as well if I don't have enough protein. Even my bank account suffers from take out or hunger fueled grocery trips when I haven't eaten for a day or two and suddenly need everything
This legit helped me so much. And sure I know it might pass again. Most things that help me stick around for a few weeks to (at the very top) a few years. But it helps for now and it helps a lot and sorting out one part of the equation is a big accomplishment, no matter for how long.
