TESSA!!! I am so happy to infuriate you with my tastey food pics. Here’s the deal with jollof rice recipes, the best don’t cook from a recipe they listen to the ancestors at least that’s what I’m told 😂

I have made jollof, but my bestie is Gambian and mine does not compare to hers. And hers doesn’t even begin to compare to her mom’s!! Like, I live for her mom’s benachin (that’s Gambian jollof rice), and I have told her as much.

This recipe seems pretty good. The key is to marinate, marinate, marinate!! I’ve made it with chicken, they usually make it with lamb though 🤤

How to Cook Vegan Benachin with MyGambia | Traditional Gambian Jollof Rice Vlog. Join us on an unforgettable culinary adventure as MyGambia teaches us to prepare Benachin The Gambia’s iconic one-pot rice dish in a delicious vegan version! We start early and heart to the Market in search of the vegan Benachin ingredients, we then head outdoors to slow-cook this flavourful vegan twist Benachin for 4½ hours.

NOTE: This is a tweaked vegan version, the original traditional recipe has meat in it. Ingredients

2 cups long-grain rice

large tomatoes, blended

onions, chopped

1 green pepper, sliced

Hot peppers

Carrot

Cassava

Cabbage

Eggplant

Pumpkin

3–4 cloves garlic

2 tbsp tomato paste

2–3 bay leaves

1 tsp black pepper

Maggie seasoning,

Vegetable oil

Quick Method 1. Sauté: Heat oil, cook onions, peppers, garlic (and ginger) after they have been pureed 2. Build the Base: Stir in blended tomatoes, tomato paste, bay leaves, seasonings; simmer until cooked 3. Add Veggies coating them in the sauce and let the thoroughly cook. Remove the vegies and add the rice.   4. Let the rice cook on low heat (or fire) and cook, covered until cooked. 5. Finish & Serve: Remove bay leaves, fluff rice, adjust salt/seasonings, and scoop into bowls.
