Pomegranate and Hibiscus Herbal Tea
My sister has taken to drinking herbal tea this past couple of years. She is taking iron, and cannot drink as much tea as she used too as it interferes with it. But there’s a wide enough variety of herbal teas to satisfy her hot beverage cravings. One of her favourite is pomegranate and hibiscus; only, she realised last week there was more apple than pomegranate in it, and she was rather cross about it! As we had beautiful pomegranates and dried hibiscus flowers at hand, we decided to make our own soothing Pomegranate and Hibiscus Herbal Tea! It also brings bright colours to a grey Monday!
Ingredients (makes about 1 1/2 cup herbal tea blend):
1 large pomegranate, emptied
3/4 cup dried hibiscus flowers
Once you have collected all the seeds from the pomegranate, remove as much of the white membrane that protects the seeds as you can. Cut pomegranate skin into large pieces and flatten onto a baking tray lined with baking paper.
Dry out in a low oven, at 70°C/°F, for a couple of hours. Remove from the oven and let them at room temperature for another hour. If there’s any of the white membrane remaining, scrape it off with a knife.
Then, break pomegranate skin into small bits into a medium bowl. You shoud get about 3/4 cup. Add hibiscus flowers, and stir well to mix.
You can either store your Pomegranate and Hibiscus Herbal Tea into a metal tea box or sealed glass jar, or wrap a heaped teaspoon of the blend into a muslin square, and tie with cotton thread to make individual tea bags.
Infuse Pomegranate and Hibiscus Tea , 5 to 7 minutes in hot water.
