This Coconut Buckwheat Cereal is a delicious and nutritious vegan breakfast option. Buckwheat groats are cooked in creamy coconut milk with maple syrup and warm spices, creating a comforting and satisfying morning meal.
Ingredients: 1 cup buckwheat groats. 1 1/2 cups coconut milk. 2 tablespoons maple syrup. 1/4 teaspoon vanilla extract. 1/4 teaspoon ground cinnamon. Pinch of salt. Toppings of choice: fresh fruit, nuts, seeds, coconut flakes.
Instructions: Rinse the buckwheat groats under cold water and drain well. In a saucepan, combine the rinsed buckwheat groats, coconut milk, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Bring the mixture to a simmer over medium heat, then reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally, until the buckwheat is tender and most of the liquid is absorbed.
