This is one of my favorite cakes a kiwi and fresh pineapple. When I was a child the pineapple cakes I used to eat had very little pineapple in them and they used the tinned one which tasted like little pieces of plastic. First attempt at gluten and dairy free baking was a success! I now have a base recipe to build around for a carrot and orange cake. Today it was a basic carrot and orange cake with orange icing, but next time will add some fruit and nuts to see how it hold with the extra ingredients. I've been feeling pretty rough this week and lunches/dinners have been my usual and nothing far out worth blogging about. Today though I've been in the kitchen with my trusty Hummingbird Bakery books and whipped up these Hazelnut Praline muffins. I made banoffee whoopie pies too which I'll post later once I've assembled them with there caramel marshmallow filling ☺️ I haven't baked just for 'me' in ages, it's always been for someone else, so I'm going to bloody enjoy these muffins! With their secret nutella middle!!!
