Advice please: Yesterday we had an appointment at the hospital to meet the paediatric consultant again regarding the boys reflux and eating issues. He thinks that they possibly have coeliac disease and well as being diary intolerant. We have to wait for blood tests to confirm this either way, but I want to test out a diary free/ coeliac diet for a couple of weeks but need weaning suitable food inspiration. Any advice?? Although they're 49 weeks, we are still at the very early stages of weaning. Also with the national shortage on Gaviscon we've been put back on Ranitidine. Dream Rice Milk & Oat MilkĀ
Ā Early in January I got a surprise package in the post of some Dream Ireland products to try. Rice Dream and Oat Dream. As the FSAI advise against rice milk for children under 4.5 years old, I had never given it to the boys. Of course both my boys are over that age now but it had never occurred to me to try it. They absolutely love it. They have been begging me to buy it again, so it will probably be a rotation of almond, soya and rice now every third litre. Rice Dream is available in Tesco, Dunnes Stores and SuperValu nationwide. They are on the long life shelf, so usually in the free from aisle.Ā
Ā Alpro Dessert Moments
These featured in Novemberās Product watch but we hadnāt tried them at that stage. They are very nice, the boys loved them of course. They are a very handy off the shelf dessert. Find in Tesco, SuperValu and Dunnes Stores.Ā
Ā Flora Freedom Dairy Free
I was hoping to taste this before writing about it but we havenāt tried it yet. It is on the shelves a while now, another addition to the wide range of dairy free butter substitutes that youāll now find in the supermarkets. It is marketedĀ for those who want a low-fat and dairy free alternative to butter. Available in Dunnes Stores, Tesco and SuperValu.Ā
Ā Water to Go Filtered Water Bottle
Back in DecemberĀ I was asked to review filtered water bottles by an Irish company Water-to-go. Ā The boys bring water to school so I decided weād give them a go. We have our own well so I never really considered filtering our water before. Ā The bottles are a generous 500ml size and are clear with bright coloured trims, we received one black one green. So what do they filter? 99.9% of bacteria, fluorine, chlorine and heavy metals. The bottles are BPA free and importantly they pass the leak test i.e. the 5-year-old and 8-year-old managed to bring them to and from school without any leaks. Perfect for school bags. The filters last 1 month and there is an indicator on each bottle to let you know when the filter needs to be replaced. If we were on water mains I think I would definitely use these all the time. As our own water doesnāt need to be filtered, IĀ donāt think I would have bought them for the boys. However for my husband and I for work they are ideal. You can purchase from their website.Ā

Maybe your local Tesco already does this but our local oneĀ has increased its dairy free range in the fridge. Everything is now in the one section, cheese, yogurts, desserts, creams and milks. Hopefully all the Tescos are going the same way, it is very helpful and the bit of choice is lovely. They have Violife and Nature Moi cheese, Alpro, Tesco yogurts and desserts and Alpro and Tesco milks and creams. They also have a fab range of Lacto Free lactose free cheese, yogurt and milk also.Ā

Aldi Ireland have increased theri dairy free range, now stocking Alpro Oat Milk and Rice Milk as well as their own brand Almond Sweetened & Unsweetened and Soya Sweetened & Unsweetened.Ā
They also have a selection of Pulsin Raw Choc Brownies available in their permanent range. You will find in the Gluten Free Section.Ā

Food intolerance stuff part 2
Right onwards! Tesco value lightly salted tortillas - these are made with maize flour and no dairy Newburn bake house (I think itās warburtonās) -really nice bread products but costly - I find the wraps are good and they freeze well too! Genius - reasonable crumpets and frozen sausage rolls Iāve used this recipe with some success but it can take a while to fry⦠https://www.dovesfarm.co.uk/recipes/quick-flat-bread-tortilla-wraps/ Quinoa is a good alternative to breadcrumbs when youāre doing something like fish cakes but I havenāt checked Jās tummy with this recently Fish fingers - gluten free ones can be bought - alternatively fish or chicken pieces can be egg coated then rolled in oats or crushed Rice Krispies or crushed cornflakes before baking. Marmite is a good way to flavour gravies ⦠More to follow :)
Food intolerances and the like
Okā¦so Iām sure hundreds of thousands others have written more successfully and more succinctly on this topic but since my darling son came along, this has become a subject close to my heart. Iāve read lots of recipes from others too but I find often itās more helpful to just be able to switch out certain ingredients for others. I want to declare that my son is cows milk protein intolerant, canāt tolerate oat milk often, has a wheat intolerance and a fructose malabsorption. I struggle the most with the fructose malabsorption to be honest because it rules out pure tomato sauces, coconut milk, soya milk, seeds, beans and peanuts and technically ought to rule out onions and garlic too although I tend to cheat and allow a little in and a whole lot of fruit is out as are fruit juices and dried fruits too. So hereās a basic list of ingredients that Iāve found most useful! Knorr stock cubes - gluten and dairy free Kallax wheat free - some of their gluten free still has milk in though Violife - itās reasonable but not really cheese Smash - yes really Tesco free from gravy granules- really salty but reasonably tasty Corn flour is your friend! Red peppers are reasonable to swap for tomatoes in lots of things! Eggs are brilliant for this diet and when mixed with banana they make a great pancake! Home made stocks - always use the whole carcass when roasting :) Vitalite is great for baking too Wheat free pasta is fine Oat cakes are good Porridge oats are fabulous both as a porridge made with water or as a filler in minced meat dishes or as a coating on baked chicken Pancakes made with wheat free flour and vitalite are also great ā¦. more to come watch this space!
Ā My little Superman turned 4 recently and of course he wanted a Superman cake. I wasnāt quite sure how this would work out but I was delighted with the results.Ā
I used a basic sponge recipe and coloured one layer blue and one layer red.Ā
Ā I took the lazy option and used Betty Crockerās Vanilla Icing. This carries a May Contain Milk warning so make your own if you are worried. To make your own buttercream icing here is the recipe.Ā I also used white ready to roll fondant icing and dyed it the colours I needed.
Creating the Logo
I downloaded a Superman logo template and printed out on an A4 page.Ā

Ā I followed this video on Youtube for how to make the logo (ignore shaping of cake unless you want the half diamond shape).Ā
Ā Mine didnāt turn out as clean as this one but I was happy with the results all the same and my little all grown upĀ Superman was very excited.Ā
Roll out the yellow icing. Place on baking paper. Place your paper pattern on top and use a sharp knife or palette knife to cut around it. Place itĀ in the freezer for half an hour.Ā
Roll out white icing on baking paper. Ā Place your pattern on top and using a cocktail stick, mark around the lines of the S. Using a sharp knife cut out the spaces around the S.Ā Place it in the freezer also for 30 minutes.Ā
Remove from freezer and using a small paint brush and red food dye, paint the S, ensuring to cover all the white bits.Ā
Place on top of the yellow icing.Ā
Paint the top of the cake with a little water and stick on the logo.
