Toasty coconut pancakes are a tropical take on regular pancakes. These cookies are light and fluffy, and they taste sweet and nutty like toasted coconut. This is great for a slow breakfast or brunch!
Ingredients: 1 cup all-purpose flour. 2 tablespoons granulated sugar. 2 teaspoons baking powder. 1/2 teaspoon salt. 1 cup coconut milk. 1 large egg. 2 tablespoons melted butter. 1/2 cup toasted coconut flakes. Additional coconut flakes for garnish. Maple syrup for serving.
Instructions: Whisk the flour, sugar, baking powder, and salt together in a bowl. Melt the butter and add the egg to a different bowl. Use a whisk to mix the ingredients together. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Toast the coconut flakes and then mix them into the pancake batter. Melt butter or cooking spray on a griddle or nonstick skillet over medium heat to make it a little more slippery. For each pancake, put 1/4 cup of batter on the griddle. Cook for about 2 to 3 minutes, or until bubbles appear on top. After you flip the pancakes, cook them for another minute or two, or until they are golden brown and fully cooked. Once the pancakes are done, take them off the griddle and keep them warm. Do the cooking process again with the rest of the batter. Toast the coconut pancakes and then serve them with more coconut flakes and maple syrup drizzled on top. Have fun with your tasty toasted coconut pancakes!

Flip the pancakes and cook for another 1-2 minutes on the other side, until golden brown and cooked through. Repeat with the remaining batter, adjusting the heat as needed to prevent burning. Serve the pancakes warm with your favorite toppings such as fresh berries, coconut flakes, or a drizzle of maple syrup for non-keto option.
