These blackberry pie bars are a delightful combination of buttery crumb crust, sweet blackberries, and a crumbly topping. They make for a perfect dessert or snack!
Ingredients: 2 cups all-purpose flour. 1 cup granulated sugar. 1 teaspoon baking powder. 1/4 teaspoon salt. Zest of 1 lemon. 1/2 cup cold unsalted butter, cubed. 1 large egg. 1 teaspoon vanilla extract. 4 cups fresh blackberries. 1/2 cup granulated sugar. 3 teaspoons cornstarch.
Instructions: Preheat oven to 375F 190C. Grease a 9x13-inch baking pan. In a large bowl, combine flour, 1 cup sugar, baking powder, salt, and lemon zest. Cut in the butter until the mixture resembles coarse crumbs. Beat the egg and vanilla extract, then add to the flour mixture, stirring until crumbly. Pat half of the dough into the prepared pan. In another bowl, stir together the remaining 1/2 cup sugar and cornstarch. Gently mix in the blackberries. Spread the blackberry mixture evenly over the crust. Crumble the remaining dough over the berry layer. Bake in preheated oven for 45-50 minutes, or until the top is slightly golden. Allow to cool completely before cutting into bars.

Press half of the crumb mixture into the bottom of the prepared pan to form a crust. Evenly sprinkle dried cranberries and chopped pecans over the crust. In another bowl, beat eggs, brown sugar, and vanilla extract until well combined. Pour egg mixture over cranberries and pecans. Sprinkle the remaining crumb mixture over the top. Bake in preheated oven for 30-35 minutes, or until lightly browned. Allow to cool completely before cutting into bars.

Instructions: Set the oven to 350F 175C and heat it up. Grease an 8x8-inch baking pan and line it with parchment paper, leaving a little extra on the edges to make it easy to take off. Put the pumpkin puree, brown sugar, vanilla extract, pumpkin pie spice, and salt in a medium-sized bowl and mix them together until they are well mixed. After adding the flour, mix it in just until it's all mixed together. Spread out 2/3 of the mixture in the bottom of the baking pan that has been prepared. Put the cold butter cubes, oats, and chopped nuts if using in a different bowl. Cut the butter into the oat mixture until it is crumbly. You can use a pastry cutter or your fingers. Spread the crumbs out evenly on top of the pumpkin layer in the baking pan. On top of the crumbs, crumble the rest of the pumpkin mixture. Warm the oven up and bake for 35 to 40 minutes, or until the edges are golden brown and the middle is set. Let it cool all the way in the pan before cutting it into squares.
