Lemon and Herb Marinated Shrimp with Coconut Pigeon Peas
Dairy Free Peanut Butter Cookies
INGREDIENTS:
▢1 1/2 cup all-purpose flour 180g
▢1/2 cup butter unsalted, room temp 113g
▢1 cup peanut butter 250g
▢1/2 cup brown sugar 100g, lightly packed
▢1/2 cup sugar 100g
▢1 tsp vanilla extract 5mL
▢1 egg large, room temp
▢3/4 tsp baking powder 3g
INSTRUCTIONS:
Preheat over to 350F
Sift flour and baking powder together then whisk to combine.
Cream butter and sugars in a stand mixer fitted with a paddle attachment. You can add an optional 1/4-1/2 tsp sea salt.
Add peanut butter and mix until incorporated.
Mix in egg and vanilla extract then add flour mixture and beat until incorporated.
Roll dough into one inch balls and place on baking sheet lined with parchment paper.
Flatten cookies with a fork in a criss-cross pattern.
Bake cookies for about 10 minutes.
Allow cookies to cool completely on baking sheet, they need to set up before being transferred.

Simple Kielbasa Stew
Ever want to eat soup but don't want to go through the whole ordeal of making it? Well, here is a healthy, hearty stew that can be thrown together easily and with little effort
Ingredients
♡3 cups chicken broth
♡6 medium-sized potatoes, peeled and diced
♡2 14.5 oz cans of green beans
♡Turkey polska kielbasa, sliced into pieces about 1/2 inch thick
♡Rosemary
♡Bay leaf
Instructions
☆Boil potatoes and chicken broth in a large pot until potatoes are softened.
☆Add green beans and kielbasa to the pot. Add rosemary to taste, as well as a bay leaf
☆Bring down to simmer for about 25 minutes
☆Remove bay leaf and serve

Egg/Diary Free (Vegan) Challah Recipe!

4 cups Plain Flour (you’ll probably need more for kneading it)
1/3 cup vegetable oil (you can use any oil you want that’s just what I use)
1/2 cup caster sugar
1 teaspoon salt
3 teaspoon yeast (I buy my bakers yeast in bulk but you can probably use 1 1/2 packets of yeast)
Soy milk (for glazing can also use maple syrup but might be a lil sticky)
Optional:
LSA - Linseed/Sunflower Seed/Almond (I use this in all my baked goods to make em a touch healther and I just eyeball how much I use)
Coco powder/dark chocolate (I use this when I’m either making double choc or choc chip challah again eyeballing amounts)
Sultanas/all spice/ground cinnamon (used when making ’hot cross bun’ challah tastes just like it! eyeballed once again)
