This Pressure Cooker Pulled BBQ Chicken recipe makes it easy to enjoy tender, tasty chicken with little work. The BBQ sauce gets mixed into the chicken in the pressure cooker, making a delicious dish that can be used in sandwiches, wraps, or over rice.
Ingredients: 2 lbs boneless, skinless chicken breasts. 1 cup BBQ sauce. 1/2 cup chicken broth. 1 onion, chopped. 2 cloves garlic, minced. 1 tsp paprika. 1/2 tsp cayenne pepper. Salt and pepper to taste.
Instructions: You can put BBQ sauce, chicken broth, chopped onion, minced garlic, paprika, cayenne pepper, salt, and pepper in the pressure cooker. Cover the chicken breasts with the sauce mixture and put them in the pressure cooker. Put the lid back on the pressure cooker and turn it on to high pressure. Let it cook for 10 minutes. After the food is done cooking, let the pressure drop naturally for 5 minutes and then release the rest of the pressure by hand. Take the chicken breasts out of the pressure cooker and use two forks to shred them. Put the chicken back into the pressure cooker and mix it well with the sauce.
