A SOPA DE BETERRABA QUE AS CRIANÇAS ADORAM
THE BEET SOUP THAT KIDS LOVE

Ingredientes
3 beterrabas médias, cozidas*
4 maçãs
200g couve flor
150g batata
1 alho francês
1L caldo de legumes
6 hastes de tomilho
1 maçã verde
creme de coco
rebentos
sementes de sésamo ou nigella
sal, azeite e pimenta, q.b.
Caldo de legumes
1 alho francês, parte verde
1 cebola
1 cabeça de alho pequena
2 talos de aipo
2 cenouras
1 folha de louro
1 ramo de ervas aromáticas (tomilho, salsa, coentros, salva...)
5 pimentas pretas
sal, q.b.
Comece por preparar o caldo de legumes. Lave e corte todos os legumes e leve a cozer em água abundante. Reserve.
Pré-aqueça o forno a 200ºC.
Separe os floretes da couve, lave e coloque num tabuleiro de forno. Tempere com sal, pimenta e azeite e massage para que fiquem bem untados. Leve ao forno cerca de 20 a 25 minutos ou até que as extremidades dos floretes comecem a ganhar uma cor dourada.
Entretanto refogue o alho francês (só a parte branca) em azeite juntamente com o tomilho.
Retire os pauzinhos do tomilho. Descasque e corte as maçãs e as batatas e junte ao refogado anterior. Junte também a beterraba e de seguida a couve flor.
Verta a quantidade desejada de caldo de legumes e complete o restante com água caso seja necessário. Deixe cozer até que as maçãs e as batatas estejam cozidas. Verifique os temperos e triture até obter um creme aveludado.
Sirva ainda quente, com algum creme de coco, lâminas de maçã, rebentos (eu usei de rabanete) e as sementes. * se quiser usar antes beterrabas frescas, opte por 4 ou 5 beterrabas mais pequenas para serem mais fáceis de cozer. Pode sempre começar a sua cozedura logo no caldo de legumes e adicioná-las depois à sopa.

3 medium beetroots, cooked*
4 apples
200g cauliflower
150g potatoes
1 leek, white part only
1L vegetable stock
6 springs fresh thyme
1 green apple
coconut cream
sprouts
sesame or nigella seeds
salt, extra virgin olive oil and pepper, to taste

1 leek, green part
1 onion
1 small head of garlic
2 celery stalks
2 carrots
1 bay leaf
1 bunch fresh aromatic herbs (thyme, parsley, coriander, sage...)
5 whole black peppercorns
salt, to taste
Start by preparing the vegetable stock. Wash and cut all vegetables and boil in plenty of water. Reserve.
Preheat the oven to 200ºC.
Separate the florets of cauliflower, wash and place in a baking tray. Season with salt, pepper and olive oil and toss to coat. Bake for 20 to 25 minutes or until the edges of the florets begin to turn golden.
In the meantime sauté the leek (only the white part) in olive oil along with the thyme.
Remove the thyme stems. Peel and cut apples and potatoes and add them to the pan. Add the beetroot and then the roasted cauliflower.
Pour the desired amount of vegetable stock and complete with water if necessary. Let it cook until apples and potatoes are tender, check seasonings and blend.
Serve still warm with some coconut cream, apple slices, sprouts (I used radish) and the seeds for some crunchiness. * If you want to use fresh beets, choose 4 or 5 smaller beets instead of the medium ones. It make them easier to cook and you can always start boiling them in the vegetable stock and then remove and add it to the soup.
