Our final steak from Chicago was the aged chuleton rib eye from @bazaarbyjose, hailing from @rosewoodranches in TX. The age statement was in the 160-day range, but the flavor was more mild than expected. The real flavor bomb was the shrimp and squid ink fideua in slide two. Fideuá de pollo y verduras
Ingredientes:
-250 gr de pollo (en mi caso jamoncitos)
-1 cebolla
-Limón
-1 pimiento rojo
-2 hojas de laurel
-1 pimiento verde
-250 gr de fideuá
-700 gr de caldo de pollo
-Ajo en polvo
-70 ml de vino blanco
-Azafrán
-Aceite de oliva virgen extra
Preparación:
Poner en una sartén un chorro de AOVE y cuando esté caliente echar las verduras bien picadas con el ajo en polvo y sofreír. Después echar el pollo troceado para sellarlo y salpimentar. Cuando esté listo echar el vino y el laurel. Dejar que reduzca el autor. Después echar los fideos, el azafrán y saltear unos minutos. A continuación, echar el caldo y un chorrito de limón. Remover de vez en cuando hasta que estén listos, si hace falta echar mas caldo.

FIDEUÁ CALDOSA DE MARISCO
INGREDIENTES: Para 6 personas. 500 gr fideo grueso nº4, 1 kg gambones grandes, ¾ kg langostinos crudos, 2 colas pequeñas de rape, ¼ kg anillas de calamar, 4 tomates maduros, 2 pimientos rojos de asar, 1 cebolla, 5 dientes de ajo, ¼ cucharadita de cominos enteros (unas 15 unidades), 1 clavo, 4 granos de pimienta negra, media cayena pequeña, 1 cucharada de pimentón ahumado, 250 cc vino tinto y 100 cc brandy. Para el caldo, 2 zanahorias, 1 pimiento verde, ½ tomate, aceite de oliva virgen extra, azafrán o colorante y sal.
