Eggs en cocotte : baked eggs in ramekins with parmesan, spinach and pancetta

Summertime Grilled Bread, Four Ways
Bruschetta sampler (Grilled Italian bread; Grape tomatoes with basil & garlic; Miniature mozzarella balls with basil & garlic pepper; Roasted baby bell peppers with honey Dijon; Roasted Italian long hots with tomato sauce; Minced Provolone & Genoa salami with oregano)
Grilled bread. Italian bread (2 loaves). Slice bread and place atop grill for several seconds per side (until marks appear)
Tomato basil. Grape tomatoes (2 pints), Garlic (2-3 cloves), Basil (1/4 bunch), Kosher salt (Dash). Slice tomatoes sin half. Mix with minced garlic, salt & chopped basil.
Miniature mozzarella. Miniature mozzarella balls (1 pint), Basil (1/4 bunch), Montreal steak seasoning (Dash). Slice mozzarella into quarters and mix with chopped basil and garlic pepper seasoning.
Baby bell peppers. Baby bell peppers (1 lbs.), Honey (2 teaspoons), Dijon mustard (2 teaspoons), Kosher salt (Dash). Roast peppers in 375 degree oven until soft (about 20 minutes). Let cool and chop. Season with salt & toss with honey & Dijon.
Italian long hots. Italian long hot peppers (1 lbs.), Garlic (3 cloves), Olive Oil (1/4 cup), Tomato Sauce (14 oz.), Kosher salt (Dash), Black pepper (Dash), Red Chili flakes (Dash). Roast peppers in 375 degree oven until soft (about 20 minutes). Let cool and chop. Meanwhile sauté garlic in olive oil, season with red chili flakes, salt & pepper. Add tomato sauce and remove from heat. Mix with peppers.
Minced salami & cheese. Genoa salami (8 oz.), Imported sharp provolone (8 oz.), Olive oil (2 tbls.), Fresh oregano (2 tbls). Cut cheese & salami into small pieces. Toss with olive oil and minced oregano.
