This recipe combines the sweetness of roasted grapes with the creamy texture of fresh ricotta cheese, balanced with the savory notes of thyme and grilled bread. It's a simple yet elegant dish that makes a delightful appetizer or light meal.
Ingredients: 2 cups grapes, seedless. 2 tablespoons olive oil. 1 tablespoon fresh thyme leaves. Salt to taste. Pepper to taste. 1 cup fresh ricotta cheese. 4 slices rustic bread.
Instructions: Turn on the oven and heat it up to 400F 200C. Add the grapes to a baking sheet and toss them with the olive oil, thyme, salt, and pepper. Before you put the grapes in the oven, heat it up. Roast them for 15 to 20 minutes, or until they start to burst and turn brown. Prepare the bread slices for the grill while the grapes roast. Make sure both sides are golden brown and crispy. On each grilled bread slice, put a lot of fresh ricotta. Remove the grapes from the oven and let them cool down a bit when they're done. Put the roasted grapes on top of the grilled bread that has ricotta on it. If you want, you can add more thyme leaves as a garnish. Serve right away.
