Thanks to @gordondiggs and his wonderful newsletter (NY Times Cooking The Veggie) for the inspiration to try grated tomatoes! Near-miraculous in its simplicity, the simple act of grating tomato halves, adding grated butter, grated garlic, red pepper flakes, and a generous helping of salt into a bowl is nearly all there is to it. Boil pasta, save some liquid, mix the tomato sauce with the pasta, cook it, add some reserved pasta liquid to emulsify the tomato and fats (we added some lemon-infused olive oil), and when it’s thickened you are done. Serve with basil and grated parm and season to taste with more red pepper, black pepper, and salt. Be ready to taste summer – a phrase I’ve heard, but never really experienced. This is it!
