Ingredients: 3 lbs venison roast. 1 cup red wine. 1/2 cup balsamic vinegar. 1 cup beef or venison broth. 2 tablespoons olive oil. 4 cloves garlic, minced. 1 tablespoon dried rosemary. 1 tablespoon dried thyme. Salt and pepper to taste. 2 tablespoons all-purpose flour for optional thickening.
Instructions: Add salt, pepper, rosemary, and thyme to the venison roast to make it taste better. Put the Instant Pot on "Saute" and heat the olive oil. The venison roast should be seared on all sides until it turns brown. Add the minced garlic and cook for one to two minutes, until the garlic smells good. Vinegar, broth, and red wine should all be added. To clear the pot, stir. Set the Instant Pot to "Manual" or "Pressure Cook" mode and close the lid. Cook on high pressure for 60 minutes.
