These salmon tacos are a delightful combination of grilled salmon fillets with a flavorful spice rub, topped with a refreshing mango peach salsa. The sweetness of the fruit salsa perfectly complements the smoky and savory salmon. It's a taste of summer on your plate!
Ingredients: 4 salmon fillets. 1 tablespoon olive oil. 1 teaspoon cumin. 1 teaspoon chili powder. Salt and pepper to taste. 8 small flour tortillas. 2 cups shredded lettuce. 1 cup diced mango. 1 cup diced peach. 1/2 cup diced red onion. 1/4 cup chopped fresh cilantro. Juice of 1 lime. 1/4 cup sour cream.
Instructions: Warm up the grill over medium-high heat. Put the cumin, chili powder, salt, and pepper in a small bowl and mix them together. Use the spice mix to coat both sides of the salmon fillets. When you use a fork to flake the salmon, it's done after 3 to 4 minutes on each side. Warm up the flour tortillas on the grill for about 30 seconds on each side while the salmon cooks. Put the diced mango, peach, red onion, cilantro, and lime juice in a different bowl. Then mix them together to make the salsa. Combine well. Put some shredded lettuce on each tortilla, then put a grilled salmon fillet on top of each one. Pour the mango peach salsa over the salmon to make the tacos. Add a dollop of sour cream to each taco.
