I have been vegan for hm nearly 10 years now! I just realized how long it's been upon typing this. I eat as nutritionally dense & gut-healthy as I can and I'm not too keen on processed & packaged foods. I had my time with those at a teen and all because that's what I knew (I didn't have deep enjoyment with my food back then). But now that I know better and do better (and want better!), I definitely understand food and nourishment in a new way that brings me peace and joy. It's become the best act of self-love (and by default, earth love) that I perform.
I call this one The Brain Bowl. I hope it doesn’t knock me out of the keto that I just started yesterday (and has been very difficult to get beyond “trace” status, even with some time restricted eating.
1 whole avocado, 2 small red radishes, 1 HB egg, around a half cup freeze dried broccoli, 1 Tbs wild salmon roe, 3 Tbs soaked raw sunflower seeds, Tbs of dulse flakes, 3 Tbs ghee, pinch of kosher salt.
Why did I use ghee instead of my normal olive oil?
Meals Prepped. Lunch and dinner for the week. Creamy tricolor quinoa with green beans, broccoli, and cauliflower for lunches. Taco Bowls (with forbidden rice, seasoned ground beef, pinto beans, salsa, mixed greens, and cheddar cheese) for dinner. I enjoy prepping my meals ahead of time so I am prepared for the week and don’t have to spend time cooking each day. It helps keep my food choices healthier and easier. My secret is to cook things I enjoy while also choosing foods with high nutrient-density.
