Plantain Burger with Jerk BBQ Sauce, Mango Mayonnaise, and Pineapple (Vegan & Oil-Free)

🌿Plantain Burger

1 ripe Plantain,sliced in rounds

1 can Chickpeas, drained and rinsed

1/4 cup old fashioned oats

2 Tbsp Oat Flour

1 Pimento Pepper,minced

2 Green Onions,chopped

2 Tbsp fresh Cilantro (chadon beni),chopped

1 tsp Mrs.Dash Garlic and Herb Seasoning

2 tsp Marmite (or BBQ,Hoisin or Worcester sauce)

Cut your Plantain in rounds

Airfry or bake until browned

(You should have ~1 cup of cooked Plantain rounds)

Add everything in a food processor and process until crumbly,not mushy.

Don't worry,it will come together, once you form the mixture (using your hands) into Patties or Balls.

I made 3 Burgers and 8 Balls.

I airfried the Balls ~12 minutes.

Baked the Burgers at 375° ~ 20 minutes

notes:

pickled pimentos are sweet, vinegary, and a little spicy. they are often a filling for olives or other cheese spreads, rarely eaten on their own

gorgonzola is a controversial cheese, often included on "least favorite" lists, with a funky flavor and odd soft-crumbly texture. piccante is the stronger-tasing variety, a little less known than gorgonzola dolce

pimentos are often the garnish for cheese plates and dishes involving gorgonzola and other strong cheeses

serving:

enjoy with green olives and toasted peasant bread

make a sandwich on a whole wheat baguette with frisée lettuce and roasted eggplant

pair with a glass of sauternes to bring out the sweetness of the pimentos and complement the salty flavor of the gorgonzola
