This 20 Minute Vegetable Lo Mein is a quick and satisfying stir-fry dish that's loaded with colorful vegetables and savory flavors. Perfect for a busy weeknight dinner.
Ingredients: 8 oz 225g lo mein or egg noodles. 2 tablespoons vegetable oil. 2 cloves garlic, minced. 1 cup sliced mushrooms. 1 cup broccoli florets. 1 carrot, julienned. 1 red bell pepper, thinly sliced. 1/2 cup snow peas, trimmed. 1/4 cup soy sauce. 2 tablespoons oyster sauce. 1 tablespoon hoisin sauce. 1 teaspoon sesame oil. 1/2 teaspoon crushed red pepper flakes optional. 1/4 cup sliced green onions scallions. 1 tablespoon sesame seeds optional.
Instructions: Follow the directions on the package to cook the egg noodles or lo mein. After draining, set aside. Heat the vegetable oil in a big skillet or wok over medium-high heat. When the garlic is fragrant, add the minced garlic and saut it for about 30 seconds. To the skillet, add the snow peas, red bell pepper, sliced mushrooms, broccoli florets, and julienned carrot. Stir-fry the vegetables for 45 minutes, or until they are crisp-tender. Mix the hoisin sauce, sesame oil, oyster sauce, soy sauce, and crushed red pepper flakes if using in a small bowl. To the skillet containing the vegetables, add the cooked noodles and the sauce mixture. Mix everything together and cook for a further two to three minutes, or until thoroughly heated and blended.
