Delicate and charming, these Raspberry Bow Tie Cookies are a delightful treat with a buttery, melt-in-your-mouth texture and a tangy raspberry filling. Perfect for special occasions or any time you crave a bit of sweetness.
Ingredients: 1 cup butter, softened. 1/2 cup powdered sugar. 2 cups all-purpose flour. 1/2 cup raspberry jam. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt. Powdered sugar, for dusting.
Instructions: Set the oven to 350F 175C and heat it up. Melt the butter and mix it with the powdered sugar in a bowl until the mixture is light and fluffy. Mix the vanilla extract and salt in well after adding them. Mix in the all-purpose flour slowly until a dough forms. To make the dough about 1/8-inch thick, roll it out on a floured surface. Cut the dough into rectangles that are about 2 inches by 3 inches with a knife or a pastry cutter. Make a small cut across the diagonal on each end of the rectangle. Don't cut the strip in the middle. This is what will make the bow tie shape. Move the dough carefully to a baking sheet that has been lined with parchment paper. After the oven is hot, bake the cookies for 10 to 12 minutes, or until the edges are just beginning to turn golden. Let the cookies cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way. Once the cookies are cool, put a little raspberry jam on the strip in the middle of each one. For the last touch, sprinkle powdered sugar over the cookies. Serve and have fun!
