Stupid Easy Crusty Bread
I am not a sweets person, ironic because I bake sweets all the time, I’m just mean and force them on my husband and anyone with an open mouth. HOWEVER I have a weakness for bread. I fucking LOVE bread, don’t even get me started on bagels. (We’ll cross that bridge in the future when my inner Jew can handle herself)
Sorry, side track, let’s make some super easy crusty bread.
With only four ingredients this bread has endless possibilities for what type of flavor you want to create. It does take some time to make but it is more than worth the wait, and it is literally just the wait.
STUPID EASY CRUSTY BREAD
Ingredients:
1 ½ Tablespoon yeast
1 Tablespoon kosher salt
6 ½ Cups all-purpose flour
3 Cups lukewarm water
Corn meal (but it doesn’t really count as an ingredient)
In a bowl mix the yeast, water, and salt. Add flour and mix until there are no dry spots ( I did add 1 ½ Tbs herbs de province and a few pinches of sage). The dough will be loose and a bit sticky. Cover with plastic wrap and let sit at room temperature for 2 hours or up to 5 hours (Just wait the five it will be worth it.
After your super long wait (because you went with FIVE hours instead of two right?), turn the dough onto a floured surface briefly work the dough until it is no longer sticky sprinkling a small amount of flour as you need it. Split into two and stretch the dough one at a time so it is round and smooth on the top and ugly at the bottom.
If you have a baking stone or larger cast iron pan feel free to break it out. I used an aluminum baking sheet ( because I forgot I had the above and I was already dedicated) sprinkle whatever you are using with some cornmeal to prevent sticking and place your dough on it, let it rest for 40 more min.
Put an oven safe pan on the bottom rack and preheat the oven to 450°F
Dust your baby loafs with flour and slash the top of them three times (maybe not the best word choice but we are sticking with it). Toss (nicely) in the oven and pour one cup of water in the pan that is in the bottom of the oven. Close the door quickly to trap the steam. Bake for about 30 min until pretty and brown. (I wanted a lighter color bread so mine came out at about 35min)
Cool completely or burn your mouth trying to eat it right out of the oven, your choice.
