Ingredients: 2 lbs pork belly, skin-on. 1 tablespoon salt. 1 tablespoon five-spice powder. 1 tablespoon white pepper. 1 tablespoon rice vinegar. 2 tablespoons soy sauce. 1 tablespoon Shaoxing wine. 1 tablespoon sugar.
Instructions: Before you start cooking, heat the oven to 375F 190C. Use a sharp knife to make cuts in the pork belly skin, being careful not to cut into the meat. Make sure the salt gets into the pork belly's scored skin by rubbing it on. To make the marinade, put sugar, rice vinegar, soy sauce, sugar, five-spice powder, and white pepper in a bowl. Cover the pork belly with the marinade and rub it all over, even the skin. Put the pork belly skin-side up on a wire rack in a roasting pan. For 1.5 to 2 hours, or until the skin is crispy and the meat is cooked all the way through, roast in an oven that has already been heated. If you want the skin to be really crispy, broil the pork for another 5 to 10 minutes. Before cutting, let the crispy pork belly rest for 15 minutes.
