Stuffed capsicums. Green capsicum stuffed with brown rice & a Chilli Sin Carne (like chilli con carne but no meat).

These stuffed capsicums were very easy to make. Mix the meat, onion, garlic and egg. Then prepare the capsicum by removing the the seeds. Stuff with the meat mixture, make a few meatballs ad place into an aluminium tray. Cover with pasta sauce. I use Five Brothers Garlic and red wine pasta sauce.
Pumpkin soup!
I saw that pumpkin was cheap at the shops, so I decided to buy a whole one, and an assortment of other veggies to go with it. Possibly the easiest food to make, and also really healthy (for me at least) Just need to simmer it for a while now and it should be ready to devour. Words can not express how keen I am for this and dinner tonight (stuffed capsicums) I hope my grandma likes it!
#111 Sandwich Maker - Stuffed Capsicum Rings
The filling for these capsicum rings was made from: 1/2 turnip, grated 2 broccoli florets, chopped 1 small sweet potato, grated 2 spring onions, sliced thinly Chopped parsley 20 gms cheese, grated 1 cup lupin flour 1 egg 1/2 cup milk Capsicum or bell pepper Combine all the ingredients. Slice the capsicum into rings about 1 cm thick, cut out the centre of the rings. Spray the hotplate with oil. Place the capsicum rings onto the hotplate, then fill them with the mixture. Lower the lid and cook for about 3 minutes.
These make are ideal served for lunch.
