Perfect for those on a Paleo diet, Bacon Almond Butter Cups are a delightful blend of sweet and salty flavors. These rich candies are the perfect treat for any occasion because they have layers of crispy bacon, creamy almond butter, and rich dark chocolate.
Instructions: Set oven temperature to 400F 200C. Use paper liners to line a muffin tin. Arrange the bacon slices on a parchment paper-lined baking sheet. Bake bacon for 15 to 20 minutes, or until crispy, in a preheated oven. Take out and allow to cool. Almond butter, coconut oil, honey or maple syrup, vanilla extract, and a small pinch of sea salt should all be combined in a bowl that is safe to microwave. After 30 seconds, or until the mixture is smooth, microwave. Slice the cooked bacon into thin segments. Load each muffin liner about 1/3 of the way full with a spoonful of the almond butter mixture. Over the almond butter mixture in each liner, scatter chopped bacon. Fill the cups to the brim with another spoonful of the almond butter mixture. To solidify the almond butter mixture, freeze the muffin pan for ten to fifteen minutes. Melt the dark chocolate chips in a bowl that is safe to use in the microwave for 30-second bursts while the cups are cooling. Take the muffin pan out of the freezer and cover each cup's top with a layer of melted chocolate. After the chocolate has solidified, place the muffin tin back in the freezer for a further ten to fifteen minutes. When the cups are set, take them out of the muffin tin and refrigerate them in an airtight container until you're ready to serve.
