Because I made Thai Chicken Pizza that satisfies both cravings!⠀ ⠀ And what better day to make it than National Pizza Day! Think chicken flavored with sesame oil and tossed in peanut sauce, then scattered over a crust with bean sprouts, carrots, onion and peanuts and finally topped with loads of stretchy ooey gooey mozzarella cheese. The flavors of Thai food are mixed with the ease of pizza in this Thai Chicken Pizza. It's a thin-style pizza with fresh vegetables, Thai peanut sauce, chicken that has been marinated, and a hint of heat. Every bite has the perfect mix of flavors!

Ingredients: 1 thin pizza crust. 1/2 cup Thai peanut sauce. 1 cup cooked chicken breast, diced. 1/2 cup red bell pepper, thinly sliced. 1/2 cup red onion, thinly sliced. 1/2 cup shredded mozzarella cheese. 1/4 cup chopped fresh cilantro. 1/4 cup chopped peanuts. 2 tablespoons vegetable oil. 1 tablespoon soy sauce. 1 tablespoon lime juice. 1 teaspoon Sriracha sauce optional. Salt and pepper to taste.

Instructions: Turn on your oven and heat it up to 425F 220C. Add the chicken dices to a small bowl. Add the soy sauce, lime juice, vegetable oil, and Sriracha sauce, if you're using it. Add pepper and salt to taste. Toss the chicken to cover it all, then set it aside. On a baking sheet or pizza stone, put the thin pizza crust. Put the Thai peanut sauce on the pizza crust and spread it out evenly. Leave a little space around the edges for the crust. Spread the chicken that has been marinated, sliced red bell pepper, and sliced red onion out evenly on top of the crust that has been covered in sauce. Shred some mozzarella cheese and put it on top of the pizza. Let it bake in a hot oven for 12 to 15 minutes, or until the crust is golden brown and the cheese melts and bubbles. Take the pizza out of the oven and give it a minute or two to cool down. On top of the hot pizza, put chopped fresh cilantro and chopped peanuts. Cut the Thai Chicken Pizza into pieces and serve right away. Have fun with your tasty Thai chicken pizza that is thin.

After a good Pilates reformer workout. Raw vegan food with my Pilates buddies!!!!
