These donuts are baked, not fried. Making them easy to make at home and a lot healthier!
These fluffy, baked donuts have a classic taste you’ll love. Donuts have never been my favorite, usually because they are so dense and filling. These babies, however, are light and easy to eat! Plus, the chocolate glaze sets perfectly, creating the perfect crackle when eaten.
Servings: makes 12 donuts
Duration: 30-35 minutes
What you’ll need:
- Donut pans, with 6 donut wells each (this is key, or else your donuts will not maintain their shape - they are cheap on Amazon)
For the donut:
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground nutmeg
- 1 1/3 cup non-dairy milk (I used unsweetened almond)
- 2/3 cup light brown sugar
- 4 Tbsp vegan butter, melted (I used Earth Balance)
- 3 tsp vanilla extract
- 2 tsp apple cider vinegar
For the chocolate glaze:
- 2 cups confectioners sugar
- 1/4 cup cocoa powder
- 4 Tbsp non-dairy milk (I used unsweetened almond)
- 1 tsp vanilla extract
Directions:
For the donuts:
1. Preheat your oven to 350 degrees and grease your donut baking pans.
2. In a stand mixer, or a large bowl, mix your dry ingredients until combined.
3. In a medium bowl, mix together your wet ingredients. Then, add your went ingredients to your dry ingredients and mix on low until just combined. Do not over-mix! Some lumps are fine.
4. Scoop batter into a large plastic Ziploc bag or piping bag. Cut the corner of the bag, and pipe your batter into your donut pans.
5. Bake your donuts for 12-14 minutes, until they are fluffy and lightly browned. Take out of the oven and cool for 5 minutes in the pan before flipping onto a cooling rack.
For the glaze:
1. Add all of your ingredients to a stand mixer, or large bowl, and mix well. If your glaze is too thick, add in more non-dairy milk 1 Tbsp at a time until your desired consistency is met.
2. Dip the cooled donuts in your glaze about half up, then flip and set on a sheet of parchment paper. The glaze may drip down your donuts, so the parchment paper will help with the mess. This is the time to sift some powdered sugar on your donuts or add vegan sprinkles. As the donuts rest, the glaze will set.
Pro tip: If you have leftover glaze, you can use it to make chocolate covered strawberries or other goodies.

Today I had a donut for lunch 💁🏽♀️ Probably not the “healthiest” thing to have, but I’ve been craving one for a few weeks now and Brendo gifted me with one so I finally was able to fill the donut-less void 🍩🍩 Being able to enjoy food, whatever it may be (for me - always vegan) is so freeing and makes me so happy (as you can see the genuine joy on my face here) I can’t wait to eat all of the yummy Sydney food with friends over the next few days, completely guilt free and just having an all round great time! Food should be nourishing for the most part, but sometimes it’s okay if it’s mostly just enjoyable because life is supposed to be enjoyed! So, look after yourselves 💘 Do whatever it is that you need to do, whether it be eat better (less junk food or more even??), exercise less or move your body more, rest more, rest less.. Everyone is different and also going through different stages of our lives. Try and really listen to what your body is telling you & respect it 🙏🏽🌈 And sometimes, it just consistently tells you to have a donut.. and who am I to deny that? 😜😂 #vegandonut #vegan #donut #selflove #loveyourself #treatyoself #plantbased #recovery (at BAKERY ON O'CONNELL)
It wasn't bad but it was a "cookie dough donut". Apparently that means lemon donut and glaze with a scoop of cookie dough just sitting in the middle... 🤔
