RANDOM RECIPE - VEGETABLE SOUP
Ingredients
2 pieces of wholemeal bread
2 large carrots
1 small parsnip
3 large potatoes
2 long celery stalks
1 medium sized white onion
1 cup of water
2 garlic gloves
1 teaspoon grated fresh ginger
1/2 teaspoon dried basil
Cracked pepper
Method
Roughly chop the garlic and grate the ginger.
Place in a saucepan with a tablespoon of olive oil/rice bran oil on a medium heat.
Roughly chop all of the vegetables and place into the saucepan.
Add one cup of boiling water to the saucepan.
Add the basil and cracked black pepper.
Bring to the boil then simmer for approximately 30 minutes.
When vegetables have softened, use a hand blender or transfer vegetables and stock to a traditional blender.
Blend until completely smooth.
Transfer soup back into the saucepan and simmer for a further five minutes before serving.
Serve with two slices of wholemeal bread toasted or a wholemeal bread roll.
Notes
- This recipe is a great dinner recipe. Dinner should be the lightest meal of the day as our metabolism is at its slowest during the evening and night time. So therefore, soup is a great choice for dinner time.
- Liquid meals actually keep you fuller for longer as liquids are more slowly digested than solid foods.
- Leave all of the skins on the vegetables. They are going to get blended up anyway. Leaving the skins on enhances the fibre of the soup immensely. Just be sure to wash the vegetables well before use.
- This soup is packed full of nutrients, vitamins and minerals.
- The wholemeal bread will keep you fuller for longer in comparison to refined white bread.
