Caramelised Pear Pastry
These super-delish little pastries are a sweet little addition to any morning tea or make an awesome dessert! I adapted a recipe from http://www.adventuressheart.com which is a pretty cool blog you should follow - making my filling from pear caramelised in butter and brown sugar. A nice and classy nom for when ya need a bit of a sweet treat.
Rustic Iced Coffee!
I'm a big fan of market-style drinks and thought this was an awesome idea for making iced coffee! Have a feeling like I will drink a ton of this while I am studying. I made coffee ice cubes the night before then made my brew, when it was room temp I put it in the freezer and about 5 mins later poured it over the coffee-cubes til the jar was half-full adding milk and a teaspoon (or three...shhh) of sweetened condensed milk to full. Quick stir and you have a dangerously delish iced coffee in your hands.
Stuffed Cheesy Bread on Crack
Yo! Study break is awesome cause it gives me a causal 2 hrs to make lunch for a mate which is always nice. Today I ended up making a pretty simple stuffed bread as an appetiser and oh boy it was incredible (ignoring the fact I have probably put on a kg by eating a quarter of it...). Kudos to joansfoodwanderings.blogspot.ca for the idea!
Banana Cinnamon Rolls with Vanilla Cream Cheese Glaze!

PS If you live in NZ or somewhere else where you cant find buttermilk powder, replace it with a cup of warm buttermilk and remove the one cup of water.
Subway Style Triple Choc Cookies
Subway are no doubt the king of cookies, their chewy uncooked goodness just makes me go crazy so it's no surprise that I have tried a huge number of recipes to try replicate this goodness. To put it simply they all sucked...really bad and I ended up wasting a lot of time and money on ingredients for some average biscuits.
But search no more! I have found the best one and they are freaking incredible! Big point is to follow the recipe closely (aside from the dutch cocoa). They seem really uncooked but harden as they cool. Recipe HERE
Apple Pie Desert Shots!
Apple Pie? Yes!
Apple pie in a shot glass that tastes incredible and you can eat with a teaspoon like a super civilized person? Double Yes!!!
These little bundles of nom are awesome and (shock horror) super easy to make. 2 stewed apples cut into super thin slithers and cooked with cinnamon and a lil nutmeg. That plus 2 layers of puff pastry that has been blind baked between 2 oven trays sandwiched with baking paper. Done.
Second post in a row focusing on apple pie... funny that. Probs cause they are just so darn amazing.

Apple Pie Pinwheels
Someone forgot to tell Auckland that it is summer so we ended up with a horribly wet and over cast summer day today. However that meant I got to lazy around at home listening to trashy pop music and chowing down on these omnoms :D
They are exactly like the nutella pinwheels but have stewed apple, brown sugar and cinnamon in them! They are sooo good warm and I have no clue why I havent tried these earlier.
Also, sorry for not posting in ages, started work at a fast food joint for the holidays and was really uninspired to make anything at home. Feel free to ask me a question!

Nutella Pinwheels
Very little beats the feeling of rediscovering childhood delicacies and indeed that was the case today. I remember at primary school taking these little treats to shared lunches and picnics and boy they went fast- so much better than the carrot sticks or vegetable sandwiches sent by those health freak parents :D
These little wheels of yum are flipping good and incredibly simple to make if you use store bought puff pastry. I made my own this time but it really wasn't much better than the supermarket variety and it took quite a while so I wont bother next time. However if you do in fact want the challenge, here is the recipe I used. All you have to do is spread a thin layer of nutella on the pastry, roll, cut into 2-3cm high rounds and bake for like 5 mins. Seriously, you have no excuse not to try them... you know you want to

LESSON SIX: Jellied Lemons with Candied Lemon Peel
When your good friend has a lemon tree you really have to find some use for them and with summer just starting to show its face, I thought I would try making something refreshing. These aren't actually that hard, but take a little prep time so why not make them the night before.
Start by juicing the lemons but be careful not to break the skins. Scoop out the flesh you cant get to with a melon baller or spoon and set the skins aside. From there all you need to do is make up the jelly (from a packet mix cause its pretty good) and fill the lemon skins with the mix when at room temp. The candied lemon pell is a bit harder and took me a few goes to get it right but its so worth it - Just make sure not to burn the caramel (like I did twice). LESSON FIVE: Nutella Cookies!
So when my awesome bud Mandy sent me this recipe, there was no doubt what so ever that we would be making these. These cookies are absolutely fantastic and are so darn easy to make - all they need is flour, egg and enough Nutella to satisfy the biggest chocoholic! It goes a lil crumbly is hard to roll out but its so you can just press it flat with your hands. Recipe can be found here! Although these are kinda expensive due to the massive amount of Nutella needed, I will definitely be making these again and in fact they could make a cool lil christmas gift!

LESSON THREE: Prawn and Mint Rice Paper Rolls
After seeing these in an Annabel Langbein cook book, I just had to try this recipe. I mean how on earth could I resist making something with prawn, mint and rice vermicelli noodels (three of the best things in the world!).
They looked great, although rolling the rice paper took a lil getting used to as I had never done it prior to this. Sadly the taste was a bit of a let down, they were way too minty for me and the prawn kinda got swamped by the smell. However the family loved them so they cant have been that bad (or my family is just very polite haha). Either way, I probably wont be trying these again.

LESSON TWO: Smoked Salmon and Sour Cream Stuffed Cucumber
Salmon is just awesome and in NZ we are just so lucky to have such an abundant supply so I thought I would make these as a light lunch or appetizer. Recipe is adapted from whiteonricecouple.com which is an awesome food blog so I suggest you take a look.
They are super simple to make and really dont require much of a recipe or detailed method. Basically cut your cucumber into slices about 3cm tall and use a melon baller to scoop out some of the inside. In a bowl mix sour cream and chives to taste and fill the cucumber. Add a slice of shaved smoked salmon and garnish with a little more of the sour cream mix and a small amount of dill. Omnomnom!
These turned out really well and are super easy to make so I will definitely be making these again this summer. Again, kudos to whiteonricecouple for the inspiration!

Lesson One : Tortillas
Spanish and Mexican food is flippin' good and at coming into summer, I thought I'd give making my own flour tortillas a go. Turned out pretty well I think :) Recipe here if your interested. Just be warned it doesnt make 8, more like 5...
