Ingredients: 6 slices bacon, diced. 1 onion, chopped. 3 cloves garlic, minced. 6 cups potatoes, peeled and diced. 4 cups chicken broth. 1 cup heavy cream. 1 cup shredded cheddar cheese. Salt and pepper to taste. Chopped chives for garnish.
Instructions: Cook diced bacon in a pan until it gets crispy. Take it off and let it dry on paper towels. Put chopped onion and minced garlic in the same pan and cook them until they get soft. Put the bacon, onion, and garlic that have been cooked into a slow cooker. Put chicken broth and diced potatoes in the slow cooker. Use a stir to mix. Set the timer for 6 to 8 hours on low or 3 to 4 hours on high. Cover and cook until the potatoes are soft. Blend the soup with an immersion blender until it is smooth and creamy. Add heavy cream and cheddar cheese shreds and mix until the cheese melts. Add pepper and salt to taste. Serve hot with chopped chives on top.
