Ingredients: 1 pork tenderloin about 1 pound. 8-10 slices of bacon use turkey bacon for the keto option. 1 teaspoon olive oil. 1 teaspoon smoked paprika. 1 teaspoon garlic powder. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 teaspoon dried thyme. 1/4 teaspoon dried rosemary. 1/4 teaspoon dried oregano.
Instructions: Preheat your oven to 375F 190C. In a small bowl, mix together the smoked paprika, garlic powder, salt, black pepper, thyme, rosemary, and oregano. Rub the spice mixture evenly over the pork tenderloin. Wrap the bacon slices around the pork tenderloin, ensuring they overlap slightly to cover the entire surface. Heat olive oil in an oven-safe skillet over medium-high heat. Place the bacon-wrapped pork tenderloin in the skillet and sear on all sides until the bacon is crispy, about 2-3 minutes per side. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145F 63C for medium-rare or 160F 71C for medium. Remove the skillet from the oven and let the pork rest for 5 minutes before slicing. Slice the bacon-wrapped pork tenderloin into thick rounds and serve.
