This summer salad with quinoa is delicious and refreshing. It has crunchy vegetables, sweet cherry tomatoes, salty feta cheese, and a tangy balsamic dressing.
Ingredients: 1 cup quinoa, rinsed and cooked. 1 cup cherry tomatoes, halved. 1 cup cucumber, diced. 1/2 cup red bell pepper, chopped. 1/4 cup red onion, finely chopped. 1/4 cup feta cheese, crumbled. 1/4 cup fresh parsley, chopped. 1/4 cup Kalamata olives, sliced. 1/3 cup extra virgin olive oil. 2 tablespoons balsamic vinegar. 1 tablespoon honey. Salt and pepper to taste.
Instructions: Cooked quinoa, cucumber, cherry tomatoes, red bell pepper, red onion, feta cheese, parsley, and Kalamata olives should all be put in a large bowl. Mix honey, salt, pepper, olive oil, and balsamic vinegar in a small bowl with a whisk to make the dressing. Mix the quinoa and vegetables together, then add the dressing and toss everything together. Put the salad in the fridge for at least 30 minutes to let the flavors mix. Enjoy the crunchiness of the quinoa with the sweet and savory flavors when you serve it cold.
