week 25: 5/5 this week! 🌟🌟🌟🌟🌟
1️⃣ Larb (Fine Cooking) i serve this the more traditional way, on a bed of shredded lettuce with rice on the side, rather than in the lettuce cups. absolutely love the flavours in this one.
2️⃣ Cold Rice Noodles with Peanut Lime Chicken (Smitten Kitchen) this may well be the best thing i’ve made/eaten all summer!! it is INSANELY delicious!!
3️⃣ Shrimp Rolls (Bon Appetit) i wanted to love these. i think they need a bit of tinkering maybe. i’ll use brioche rolls next time (i couldn’t find potato rolls so just used portuguese rolls which weren’t right) and i think the filling tastes better after it’s rested and the flavours have had a chance to meld.
4️⃣ Pizza Night! (Jim Lahey’s No-Knead Pizza dough is the shit!!) this week we had your basic Margherita Pizza as well as a Caramelised Onion & Ricotta with Roasted Brussels Sprouts Pizza. sooooo good!!! 🍕🍕🍕😋
5️⃣ Steak with Grape, Avocado & Arugula Salad (Gimme Some Oven) a winning combo of flavours in this here salad: grape, avo, red onion, feta! yummo!! goes so well with a juice steak that i unfortunately over-cooked 🙄
week 24: so friday night date night seems to be a thing. no complaints here! made everything but the larb -- check back next week for the recipe link :)
1️⃣ Sesame Rice Noodles with Shrimp (Epicurious) i gotta admit: this was no big deal to me. Don’t get me wrong: i LOOOVE noodles but this just didn’t do it. it’s not bad, but it’s not even remotely amazing.
2️⃣ Chicken & Chorizo Fajitas -- i just made this not too long ago but it’s so good and get requested a lot. it’s basically just strips of chicken coated in Sante Fe spice mix (Canadian Living), then sautéed with chorizo sausage and a ton of thickly sliced onion. bang that in a tortilla with the usual suspects and there you go.
3️⃣ Pulled Pork Sandwiches (PreventionRD) I’d originally started with the Pioneer Woman’s recipe but then ventured WAY off, borrowing only the pop addition, and even then, went with rootbeer cos rootbeer > dr pepper obvs. so basically it’s the pulled pork (with rootbeer) topped with that gorgeous sauce (i used half ACV/half red wine vinegar instead of balsamic), slices of pickle and Jamie Oliver’s coleslaw -- amazing!!! i always want to make enough for 20 people but then keep it for ourselves ☺️🐽
4️⃣ Re-bar Almond Burgers (Rouxbe) there is an AMAZING restaurant in Victoria on Vancouver Island that makes the most incredible veggie burgers. the recipe is closely guarded (i’ve scoured the internets; you won’t find it anywhere). BUT there is a lovely lady who i believe may have created the closest approximation to it. it’s rather a bit of work, but so worth it! it also makes a bunch so unless you're feeding 9 people, you’ll have some leftovers.
5️⃣ Bucatini with Marcela Hazan’s Tomato Sauce with Onions & Butter (Smitten Kitchen) so simple yet so unbelievably yummy!! this is one of those “i’ve got nothing in the fridge to make for dinner” meals (altho clearly that’s NOT the case as i’d planned ahead to make this one -- that’s how tasty/easy it is)
week 24: more hot weather eat on the deck food 😎☀️😎only managed to cook 4 times this week as we had a date night plus it was our boy’s birthday last week. And leftovers #yayforleftovers
1️⃣ Summer Polenta with Chimichurri & Tomatoes (Saveur) this was so good! more so than i expected! i’ve always wanted to try polenta but didn’t fancy making braised short ribs or a ragu or similar in this heat and then i stumbled upon this recipe. will be making it again before the summer is out!
2️⃣ Salmon Burgers with Dill Tartar Sauce (Fine Cooking) i make this one all the time. not sure if it was better this time because it had been a while or cos I used local wild salmon.
3️⃣ Next Level Steak & Onion Sandwich (Jamie Oliver’s Comfort Food) the onions in this sandwich are TOP SHELF!!! this is how i will be caramelising all my onions for sandwiches/burgers in the future!! the steak however left something to be desired; flank steak should really be marinated. i’ll try a different cut next time.
4️⃣ Panzanella with Marinated Chickpeas & Chimichurri (How Sweet Eats) oof! this is summer in a bowl! i used the leftover chimichurri from the polenta meal as the recipes were almost identical and it was beyond delicious!! i could’ve eaten the whole bowl myself!!
*️⃣ Brownie Ice Cream Sandwiches (Smitten Kitchen) filled with Cookies & Cream Ice Cream (Brown Eyed Baker) i have been wanting to make these brownie ice cream sammies for 3 summers in a row so I decided the boy’s birthday would be the perfect excuse, seeing as he’s not a fan of cake (what a loser). filled it with his fave ice cream and they were out of this world!!! now all i can think of is PEANUT BUTTER brownie ice cream sandwiches!! 😦😦😦
Week 23: summertime eating is the best! ☀️😎
1️⃣ Cold Rice Noodles with Peanut Lime Chicken (Smitten Kitchen) oh boy!!! this is all I want to eat on hot summer days! I’m not kidding. 😎🍜 i typically don’t make the same thing over and over again but this one is going to get made again VERY SOON!!
2️⃣ Red Lentil Cauliflower Burger with Onion Rings & Roasted Peppers (Vegan Richa) these were pretty good but a lot of different steps and i’m not sure it was worth it. the onion rings are tasty but overall get lost in the burger (next time, i’d add less water to get a thicker coating and serve them on the side?) totally spaced on snapping a pic too.
3️⃣ Chicken, Brie & Fig Sandwich (Earl’s Restaurant) THIS IS A TASTE SENSATION!! i’ll make this forever (and still continue to order it whenever we go to Earl’s)
4️⃣ Salmon Tikka with Cucumber Yogurt (Jamie Oliver) haven’t made this in ages and it’s so good! not sure if it was better this time because it’s been so long or because we’ve started buying local wild salmon 🐟
5️⃣ Sugar Snap Pea and Carrot Soba Noodles (Cookie + Kate) this was yummy altho i think for next time, as per kate’s suggestion, i’d swap out the snap peas for thinly sliced red pepper. try as i might, i just don’t love snap peas.
6️⃣ Crispy Fish with Lemon-Dill Sauce (Cooking Light) next level fish sticks. i bought halibut instead of cod for whatever reason and boy was it good!
We've started sneaking in a weekly date night the last couple weeks so maybe I should just plan 6 meals/week from now on. Larb (one of my faves!) coming up next week fo sho
Week 22: almost a full week of cooking – and it was a good one!!! 😍😍😍
1️⃣ Enlightened Miso Power Bowl (Oh She Glows) this is super tasty!! a nice change from our usual grain bowls.
2️⃣ Shrimp Scampi (allrecipes) this was just okay. I think I can probs tinker with it and improve it. 🍤🍤🍤 it smelled exactly like shrimp and garlic butter when I was making it but somehow that disappeared when it all came together.
3️⃣ Tandoori Chicken (Maunika Gowardhan) & Garlic Naan (Sweet Pea’s Kitchen) ooof, this is tasty! 😋 the actual recipe in her book is for full butter chicken and I will make that one day but I wanted to make the chicken just on its own. this is the second time I’ve made this naan (and the first time it worked out ha); the trick is to roll out only 6 at a time, grill them and then do another 6. so yummy, altho they are only good fresh – were rock hard for leftovers the next day.
4️⃣ Cubanos (Chowhound) love these. make them fairly regularly. i have no clue how authentic they are, but would love to visit Miami to compare 🇨🇺+🇺🇸
5️⃣Peanut-Sesame Slaw with Soba Noodles (Cookie + Kate) oh this is another salad I make quite often. everyone loves it and it’s more filling than you’d think.
6️⃣ Chile Garlic BBQ Salmon (allrecipes) this is the first fish meal I ever cooked for the kids and to my surprise they not only loved it but it became my son’s absolute favourite meal for YEARS. 🐟 I use fillets rather than a whole salmon.
I will make the cold rice noodle salad next week, I promise!
Week 21: busy week! out to dinner plus camping! didn’t have to cook much ;)
1️⃣ Cheeseburgers and Couscous Salad (Canadian Living) so i pretty much always make the same things when we go camping. how can you go wrong with a hamburger, amirite?? 🍔🍔 this salad is yummy tho. years ago, when i first starting make it, i’d keep scooping myself small bowl after small bowl all thru the day and then it’d be gone 😳
2️⃣ Chinese BBQ Chicken and Nappa Cabbage Picnic Salad (Simply Recipes) no recipe for the chicken, i’m afraid; the recipe comes from friends of my mother from many years ago. so good. 🍗🍗🍗 the slaw is also killer; they go together so well and taste like summer to me.
3️⃣ Fetamato 🍅🍅🍅🍝 a friend of mine made this up and it’s dead easy:
3 Tbsp extra virgin olive oil
2 cloves garlic, minced
1 large red onion, diced
8 roma tomatoes, diced
1 Tbsp balsamic vinegar
1 tsp. dried oregano
1 tsp. dried basil
200 g feta cheese, cubed
¾ lb. dried fusilli pasta
1. Cook pasta according to directions. 2. Heat oil in large skillet. Add onions and garlic, cooking until onions are transparent. 3. Add tomatoes and simmer on low until all are soft. 4. Add balsamic and spices. 5. About 5 minutes before you’re ready to serve, add the feta and gently stir to incorporate.
4️⃣ Hoisin Salmon and Sesame Soba Noodle Bowls (Half Baked Harvest) 🐟 this is a bit of a ridiculous recipe and needed serious streamlining but boy, was it tasty. so much flavour! also: noodles!! 🍜 i love noodles!!
Week 20: a week full of sunny meals altho I don’t think we got much sun :(
1️⃣ Chicken Bulgogi (David Lebovitz) and Sweet & Spicy Slaw (Bon Appetit) this was super tasty. I missed the bit in the recipe where it said to pound the thighs to uniform thickness so obvs mine were a bit thicker and therefore did not absorb the marinade as well, but they were still delicious! also! grilled scallions!! yumm!!
2️⃣ Falafel Salad (Cookie + Kate) so last week i made falafel burgers and while lovely, decided i’d prefer them in salad format as i found them too heavy with the bun. then i stumbled upon her crispy baked falafel recipe THAT SHE SERVES ON SALAD and it is a goody!! can’t wait to have this again.
3️⃣ Pad Thai with Chicken & Shrimp (Rachel Ray) i am a big fan of noodles. 🍜 this always hits the spot! my bean sprouts liquified in the fridge before i had a chance to make this and i didn’t have any peanuts, but it was still so good!! (obvs better with sprouts and peanuts tho)
4️⃣ Pizza (Bon Appetit) oh boy, this is the best dough i’ve ever had. i find it best to only make two different kinds of pizza at a time. 🍕🍕🍕 when i made used to make six (the dough recipe makes enough for 6 pies) i made six different pizzas with six different toppings and it was too crazy. now i just make 3 of each kind. this time, it was Tuscan (pesto sauce, sausage, tomatoes and fresh mozzarella) and Rosemary Potato (fresh rosemary and potato ;))
5️⃣ Asian Grilled Chicken Salad (from an old Canadian Living magazine but i cannot find the recipe online) this is so refreshing! i love meals like this! all the noodles -- all the time! 🍜
Week 19: aaaaaand just like that, the streak is over. sadly, the camping did not happen as the weatherman called for rain and we chickened out and postponed till later in the month. (and of course it was sunny the entire time!) but this afforded us some time to put in a back garden so we can grow our own veggies. suffice it to say, I cooked less than I intended 😬
1️⃣ Cauliflower Falafel Veggie Burgers (Cookie + Kate) these were rather delicious 👌🏻 altho a bit too much bulk for me. next time, I’ll nix the bun and serve with a bigger Greek salad.
2️⃣ Beef Tenderloin Steaks with Tomato & Bocconcini Quinoa Salad (Quinoa 365) these were actually the best steaks I’ve ever served. cooked to perfection, if I do say so myself! and the salad is the bomb. 👍🏼👍🏼
3️⃣ Warm Lentils with Fennel & Halloumi (Yummy Beet) oh boy! another vegetarian winner!!! i love everything about this meal!! can’t wait to make it again! 💣💥
4️⃣ Coconut Shrimp Noodle Bowls (Bev Cooks) yeah this one’s a keeper. super easy, last minute meal. tasty tasty tasty! 🍤🍤🍤
Week 18: 7 for 7!! i’m on a roll!! 🎉🎉 granted I’ve changed how I look at the week again. Sunday to Saturday wasn’t working for me so I’m now going Friday to Thursday. Ergo, the noodles and the banh mi were also in last week’s meal plan. still counts tho!
also, garlic scapes!! had these for the first time (thank you lovely neighbour for bringing them from your garden) 🌱🌱
1️⃣ Vietnamese Noodle Salad with Lemongrass Shrimp (Fine Cooking) 🍜 this is the epitome of summertime eating for me but i rarely make it, opting for what i call the lazy man’s vietnamese bun. is it the shredding of the lettuce? the mincing of the lemongrass? maybe. but it’s worth it.
2️⃣ Banh mi (Cooking Madly) I used to make the (admittedly very tasty) meatball version à la Bon Appetit but once I found this pork marinade online, that was it. the best sandwich of summer, bar none. 💣
3️⃣ Roasted Cauliflower & Freekeh with Garlicky Tahini Sauce (Cookie + Kate) this is so good, I could eat it ALL. DAY! 👯👯 all of the roasted cauliflower, please!
4️⃣ Sweet Chili & Rootbeer Baby Back Ribs (Fine Cooking) okay so I’m not 💯% satisfied with my rib game. the sauce on these is tasty as heck but I’m looking for the meat to fall off the bone. what am I doing wrong? what’s the secret?? 🤔 can’t go wrong with corn on the cob, cole slaw and the aforementioned garlic scapes tho. just grilled those suckers on the bbq for a couple minutes and they are good! will be picking some up from the farmer’s market this weekend
5️⃣ Chicken & Chorizo Fajitas (Santa Fe Spice Mix from Canadian Living can be found here) aside from the spice mix that i rub over the chicken, there’s no real recipe here. lotsa onion, lotsa salsa, roll ‘em up, eat! 🌯🌯 got local chorizo tho instead of the cured I normally buy from the grocery store. so much better.
6️⃣ Vietnamese Shrimp & Sweet Potato Curry yeah no link for this one. a friend gave me the recipe years ago, I’ve googled it to find the source but it’s not on the internet anywhere!! 🦄🦄🦄 #sorry
7️⃣ Shanghai Fish (Bon Appetit) omg this is dang tasty! perfect summertime meal. and noodles!! it’s supposed to be an appy but if you serve this on a bed of udon noodles? boom! full meal! can’t get enough of the star anise sauce that goes over everything. 😋😋😋 served it with spicy green beans which would have been tasty if my beans hadn’t frozen in the back of the fridge and turned to mush 🙄
Week 17: This was a flavourful week! one i’d be very happy to repeat 👯👯 that bulgogi chicken seems to be evading me tho… it’s one of those marinate-the-night-before jobs which are not completely out of my realm (uh hello, flank steak and banh mi!) so i’ll get to it soon.
1️⃣ Grilled Flank Steak with Cucumber-Yogurt Sauce (Fine Cooking) not sure what happened here… i dunno if i just paid more attention when i made it (i’m thinking it’s the toasting and grinding of the cumin seeds) but whatever it was i did, i hope i do it again!! also, chucking some peppers and onions on the grill when your steak is tenting is always a good idea! 🙌🏻
2️⃣ Fresh Arugula and Black Bean Tacos (Cookie + Kate) i’m not sure i’ll ever get sick of this one. 🌮 i know she calls for pickled radishes (and yes they are tasty) but pickled onions FTW. always.

6️⃣ Chickpea Dumplings In Curry Tomato Sauce (Vegetarian Ventures) oh boy, this is delicious! a new recipe to try and it was amazing!!! note: get correct peppers next time. 🌶🌶🌶
Week 16: ah summertime! ☀️☀️☀️ love outdoor meals!! love eating on the deck!! 😎🍹 five outta seven last week due to football matches and leftovers. not complainin’
1️⃣ Chicken & Tahini Noodle Bowl (Bon Appetit) i always forget how tasty this is. i tend to save this recipe for summertime (which irks my son who does not understand seasonal eating) and i love it! 😍
2️⃣ Kale Salad Bowl with Tahini (I Will Not Eat Oysters) this is such an insanely satisfying meal that we eat ALL. THE. TIME. one of my husband’s favourites; he requests it every time i make up a meal plan 🤗
3️⃣ Classic Hamburger (no recipe: just good organic beef, with some onion, garlic, worcestershire and salt & pepper) 🍔🍔🍔 quintessential camping meal 🏕🔥
4️⃣ Arugula Salad with Turmeric Chickpea Cakes & Garlicky Avocado Cream (Pure Ella) i’d never made this before but the flavour combo sounded delicious to me. a few hiccups in the recipe but worked around them and the dish turned out beautifully! will definitely be making this again.👍🏼👍🏼
5️⃣ Shrimp Tacos (Clean & Delicious) i make this on the reg, never get tired of the flavours and it’s dead easy 🍤🌮🍤🌮
The tuna burgers and tandoori chicken get bumped for now i guess. having a hard time finding good ahi in the shops lately. and i have been wanting to make the tandoori for AGES!! patience, Iago.
Week 15: this was a good week. it was the old guy’s birthday so lots of planning and prep but the rest of the week was good too, even if i forgot to snap a pic one night
1️⃣Spinach Artichoke Lasagne (Cookie + Kate) can’t seem to stop making this one. just need to buy a proper 9x9 pan cos the 8x8 is making a huge mess of my oven!!
2️⃣Greek Meatballs with Lemon Couscous & Feta Sauce (Cuisine at Home) been making this for years. not super authentic – at least we saw nothing like this when we were in Greece last summer – but we love it just the same.
3️⃣Black Bean Burger with Salsa Fresca and Avocado Crema (Saveur) did not have high expectations for this one but wow, out of the park! the combo of flavours is amazing! have to remember to make the patties slightly smaller in diameter than the buns cos they sort of flatten a bit more in the pan.
4️⃣Ricotta Gnocchi & Meatballs (Serious Eats, Smitten Kitchen, Ina Garten) was trying to recreate the Gnocchi & Meatballs served at Nook for the old guy’s birthday so had to cobble together a few recipes but i dare say it turned out rather beautifully. was second-guessing my sauce choice (realised i’d actually wanted a ragu whilst the marinara was simmering) but the loooooonng simmer melded all the flavours together so i’d do the same next time. will defs double or triple the gnocchi and freeze the extra batches for future use tho.
5️⃣Chicken Caesar Wraps (no recipe but it’s dead easy, altho a pic would have been helpful, yes?) this was inspired by a less than delicious wrap made for us that included canned chicken and no-name bottled dressing. all you do is butterfly a couple chicken breasts, brush them with olive oil that you’ve crushed some garlic into, and bake or grill till done, then slice. make a quick caesar salad dressing (i had some leftover howsweeteat’s in the fridge) and toss over some romaine or whatever greens you’ve got in your fridge, thinly slice some red onion, grate some parm, then pile it all into a spinach or whole wheat or whatever-you’d-like tortilla and roll ‘em up. dead easy, super quick, kid friendly. also good for packing up for a picnic.
6️⃣Grilled Bratwurst Sandwiches with Tomato Jam and Sauerkraut (Fine Cooking) oh boy! the tomato jam alone!! so good! i always double the tomato jam and were there any leftovers?? winning flavour combo on this one! actually it would be smart to double the recipe for leftovers. or just make sure i make it when i know the kids won’t be home for dinner 😏
Week 14: bit of an easy week for me, what with mother’s day and getting spoiled by my children. also i never cook dinner when i’m going to bookclub so i can feed my face there.
➡️Fried Chicken Sandwich (Rowdy Kitchen) full disclosure: i did not make this. my lovely daughter created this recipe and made it for me for Mother’s Day. i like her a lot. also these sandwiches!!
1️⃣Roasted Cauliflower & Freekeh with Garlicky Tahini Sauce (Cookie + Kate) oh boy! this is my ideal vegetarian/vegan meal! could have eaten this for days. so good!!
2️⃣Griddled Steak with Horseradish Sauce (Jamie Oliver’s Food Revolution) with Arugula and Dried Cherry Salad (Cookie + Kate) this was rather delightful! managed to cook the steaks properly without over-cooking or serving raw for once in my life. also this salad is delicious! made it without the rice (forgot 😬) and it was just as lovely, if not as filling.
3️⃣Johnny Carino’s Angel Hair Pasta with Artichokes (Carino’s Restaurant) perfect summertime meal. got this every year we went down to Burlington, WA and loved it every time. okay maybe not the last couple times cos now that i’ve the recipe, i can tweak it to my exact specifications 👌🏻
4️⃣Salmon Burgers with Dill Tartar Sauce (Fine Cooking) always tasty, these. finally found skinless salmon (freezer near the seafood counter) which i’m thinking is better than how i used to buy it – no bones this way! i swore I snapped a pic but i guess not 🙄
*️⃣BONUS: Coconut Lime Donuts (Chez Us) these were so good, i had to include them. i’ve decided bookclub will become my outlet for baking; i get a taste but the temptation to eat the entire batch is removed.
Week 13: 6 outta 6. not bad. didn’t account for leftovers so the Ahi tuna & risotto got bumped.
1️⃣Ricotta Gnudi with Pomodoro Sauce (Bon Appetit) I am going to attempt this one more time and if i’m not happy with the gnudi, that’s it -- i’m done. finally read the comments on this recipe and will take the advice listed and drain the ricotta. cos the taste is lovely but is always a mess.
2️⃣Sweet Potato & Black Bean Veggie Burgers (Cookie + Kate) these are yummy. got some more in the freezer for a last minute dinner.
3️⃣Roasted Turkey Roulade (Ina Garten’s Barefoot Contessa: Back to Basics) i did not love making this. admittedly, it was rather tasty, but a major pain in the ass. that said, i’ll likely make it again cos the stuffing was top shelf! just probs not for ages.
4️⃣Bangkok Coconut Curry Noodle Bowls (Pinch of Yum) i could eat these forever!
5️⃣Carnitas (Chevy’s Fresh-Mex) oh boy. i could eat these forever too! always surprised when we finish it off cos i feel this meal should feed about 30 people. sadly, only about 6 😢 this will be made again long before next year’s Cinco de Mayo 🇲🇽
6️⃣Shrimp and Avocado Salad with Miso Dressing (Pinch of Yum) baby kale is the way to go with this one. tried it with spinach and while it’s still tasty, i wasn’t a huge fan of the mouth-feel (i hate that i just said that) -- the spinach weirded me out and yet the only way i like spinach is raw. anyway, baby kale FTW.
Week 12: sooooo close! i was on a 13-day streak there! alas, johnny carino’s angel hair pasta will be for another day.
1️⃣Garlic Shrimp and White Beans (Bon Appetit) this is a goody. it’s billed as a 30-min dinner but i think it would benefit from a longer simmer time to get those beans all nice and garlic tomatoey. hardly feeds four tho, altho we ARE pigs 🐷😳
2️⃣Peanut-Sesame Slaw with Soba Noodles (Cookie + Kate) love this salad. could eat this all. day.
3️⃣Chicken with Caramelized Onion & Cardamom Rice (Jerusalem) oh this is tasty! not a huge fan of bone-in chicken so went the boneless thigh route and therefore cut down slightly on the cook time. so delicious! comfort food, for the win! i would say it’s even better the next day but i’m not sure we had leftovers 😬
4️⃣Salmon Burgers & Potato Salad with Mustard Vinaigrette (Gourmet) okay so no one seems to have skinless salmon in the shops these days, so i picked up some nice organic ground beef and made regular hamburgers. 🍔 well, with cheese and caramelised onion. s’all good, baby.
5️⃣Rice and Lentil Curry Bowls with Spicy Roasted Carrots and Cashew Cilantro Sauce (Pinch of Yum) what is the deal with lentil curry and me not taking pics of it?? this is like her regular lentil curry but next level! i LOVE this meal! that cashew cream is the shit! gah! how irritated was i when the next day i realised i forgot to put avocado on top!! 😩😩😩
6️⃣Steak with Mixed Peppercorns and Pomegranate Glaze (Bon Appetit) another goody! it’s been AGES since i’ve made this - was relegated to the “company” file but it’s dead simple so suitable for any night. served with crushed potatoes. so tasty!
Week 11: seven out of seven meals this week! 💯🎉 it’s been a looooong time since that’s happened! i guess we managed to consume any and all leftovers for next day lunch. win win (win)!
1️⃣Heart-Stuffed Shells in a Ricotta Sauce (from the Smitten Kitchen cookbook; but also found here) These are lovely. Fairly time-consuming but well worth it. I will make these again (and again). warning: makes at least 25 shells, not 18 as per the recipe.
2️⃣The Big Vegan Bowl (Oh She Glows) This is a popular one for #meatlessmonday altho it does take a fair amount of time. why do so many salads take so much time??? pro tip: make a big batch of hummus ahead of time (like i did last week when we enjoyed those lovely Vegiterranean sammies!!)
3️⃣Fish Tacos (Fine Cooking) 🐟🌮 do i love these? sadly, and quite contrary to my family, i do not. I don’t dislike them but I’m underwhelmed; I just don’t taste the fish in there. the latest discussion brought to light that perhaps I am putting too much on them: pico de gallo AND cabbage AND guac?!? i do admit, the recipe does not call for guac but on what taco is guac unwanted? (maybe this one.)
4️⃣Pizza (no knead dough from Bon Appetit & toppings from common sense and Take a Megabite) 🍕🍕🍕We’ve got this. No more dreading making pizza. The key is to make only 2 different kinds at one time (not 6!!) This is straight up the best dough tho. Who doesn’t like Margherita Pizza? and then for health, White Pizza with Lemony Greens.
5️⃣Vietnamese Noodles with Steak and Shrimp (Canadian Living) 🍤🍤🍤 This looks like a dog’s breakfast but is sooo tasty and delicious and screams summer. Also, it’s dead easy.
6️⃣Turkey & White Bean Burgers (Fine Cooking) These are truly delicious! I think i first made these cos they look healthy (legumes = health) but they are so yummy! the honey-mustard sauce may or may not have something to do with that.
7️⃣Chicken Soup with Miniature Leek-Chive Matzo Balls (Bon Appetit) & Salmon and Whitefish Cakes with Horseradish Cucumber Sauce (Bon Appetit) i’m not Jewish so don’t technically celebrate Passover; however, I am always on the lookout for foods/recipes from different cultures. This may have been my favourite meal of the week – and that’s saying a lot! both dishes were beyond tasty!! so glad i made the full recipe cos there was enough for lunch the next day 😋😋😋
