Set the timer to 8 minutes and press the manual or pressure cook button. When the cooking time is up, let the pressure naturally release for 5 minutes before quickly releasing any remaining pressure. Stir the potatoes after opening the lid. Repeat the saut process for another 2-3 minutes, or until the potatoes are crispy and golden brown. Garnish with fresh parsley and serve immediately.

Layer potato slices, cooked leeks, and crumbled goat cheese on each round, leaving a border around the edges. Fold edges of dough over the filling, pleating as needed. Brush edges of galettes with beaten egg. Bake for 25-30 minutes, or until crust is golden brown and filling is bubbly. Serve warm and enjoy!
