Our final lunch of the Ration Challenge! Flatbread, rice crackers and hummus. As many of you know, this week, I've been eating the same rations at hat a Syrian refugee eats in Jordan. It's been tough and a serious education in lots of ways! I've thought of the hopes and dreams of these people and have persevered because of them. The challenge will be over for me tomorrow but for many of these refugees, the end could still be a long way off. I got my 120g protein ration reward for raising £400, so far! 👏😁 I decided to go for cashew nuts as I really like them and there's quite a lot. We've been snacking on a few and plan to make cashew butter (like peanut butter) in the morning for breakfast to go on our flatbread. Day 1 Dinner We've made enough for dinner today and lunch tomorrow. We've used about a third of a can of kidney beans and chopped them up so they'd go further. We also used a half a can of sardines and another spring onion with the same flavourings as we did for lunch today, namely ginger powder, garlic powder, cumin powder and salt. It certainly is an eye opener having to measure out our food. It's showing me too though how little we can survive on and yet still have flavour in our food. We have the perfect recipe for your sweet tooth. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 270 g vegan dark chocolate (very finely chopped, 72% cacao or higher)⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 7 Tbsp (103 ml) light or full-fat canned coconut milk (well shaken)⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1/2 tsp vanilla extract (optional)⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1/4 cup (30 g) unsweetened cocoa or cacoa powder, or finely ground hazelnuts for coating.⠀⠀⠀⠀⠀⠀⠀⠀⠀ - 1 drop Cardamom essential oil⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Instructions: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. Once chilled and firm, prepare a small dish of cocoa or cacao powder for rolling. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 7. Use a tablespoon-sized scoop or spoon to scoop out small round shaped truffles. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 8. Toss in cocoa or cacao powder to coat. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Enjoy truffles immediately or refrigerate for 1-2 hours overnight. Store truffles covered in refrigerator for freshness. Motivate is one of my favourite blends that I go to when I need some time out to destress and relax. It makes me feel better straightaway and calms me right down. I wouldn't be without it.
