500g zucchini
1 cupĀ corn kernels
1 bunch parsley chopped
4 spring onions, sliced
sea saltĀ andĀ black pepper
zest from 1 lemon
3 eggs
½ cup almond meal (or GF flour of your choice)
optional: prosciutto crisped in the oven to serve
YoghurtĀ TzatzikiĀ ā combine all ingredients together
1 bunch mint chopped
1 cup natural yoghurt (I used lactose free)
2 tsp lemon juice
1 tsp fresh (or dried) dill leaves

Mocha Meringue Kisses
The other little sweet bite I decided to do for my afternoon tea was mocha meringue kisses. I do not drink coffee but love anything coffee flavoured.. These little meringue delights are the perfect combination of sweet and well coffee flavour..
It is great because you can prepare them in advance, however I recommend you do not assemble them until just before you want to eat otherwise the meringueā¦
