sometimes the best thing to be done is to break out a bottle of bubbly to celebrate.
bourbon ginger punch
but a whole bunch of ice in a giant vessel. add four cups of juice (i used mango but peach would be really good too), two bottles of ginger beer, two cans of cider, two cups of soda water, and three cups of bourbon. stir and serve.

pimmsy sangria
put half a bag of frozen berries in a pitcher. add a sliced orange, half a sliced cucumber, and some slapped mint or basil leaves. pour in a goodish amount of gin and a can of cider. then pour in a bottle of rosé. top with soda water.
floating red wine gin sour.
make a honey simple syrup by combining three quarters of a cup of honey with one quarter of a cup of water in a small saucepan over medium heat. remove from heat once combined and let it cool to room temperature. then, add a measure of gin, half a measure of ginger liqueur, half a measure of honey simple syrup, the juice of half a lemon and an egg white to a shaker full of ice. shake until the outside of the shaker is frosty. strain through a hawthorn strainer into your glass. pour some wine over the back of a spoon into the glass, and serve.

coffee lime spritz.
muddle a few mint leaves with the juice of half a lime in the bottom of your glass. add a measure of coffee liqueur and stir. add ice and stir again. top with lime soda and stir. garnish with more slapped mint and a lime wedge.
honey basil g&t.
make a honey simple syrup by warming three quarter cups of honey and one quarter cup of water on the stove. let it cool. then, muddle some basil leaves in the bottom of a glass with a splash of your honey syrup. add a measure or two of gin. stir, add ice, and stir again. top with tonic and stir yet again. garnish with a twist of lemon.
ginger coconut and rum.
make a ginger syrup by warming half a cup of sugar and half a cup of water on the stove. grate in a goodish knob of ginger. let it cool, and then you can strain the ginger out. add a splash of the cooled syrup to a glass with ice. add a measure or two of dark and/or spiced rum and stir. top with coconut water and garnish with a lime wedge.
grapefruit gin and soda.
put some ice and a few dashes of rhubarb bitters in a glass. add a measure or two of gin (i used hendrick’s for its cucumberyness). top with grapefruit soda water, not pop. stir. serve with a wheel of lime.

maple whiskey sour
put some ice in a shaker. add an egg white, two measures of rye, one measure of maple syrup, the juice of half a lemon, and a few dashes of walnut bitters. shake for 30ish seconds. pour into a glass and garnish with a lemon wheel.

ginger julep.
make a ginger syrup by warming half a cup of sugar with half a cup of water on the stove. grate in a goodish knob of ginger. let it steep for a good while, and then you can eventually strain the ginger out. muddle a splash of the syrup with a handful of mint leaves in the bottom of a glass. add a measure of bourbon or rye. stir, add ice, and stir again. slap a few whole mint leaves and garnish your drink.
gin rickey.
squeeze the juice of a lime into the bottom of your glass. slice up another whole lime and layer with ice up to the top of the glass. pour in as much gin as you would like. top with soda. stir.
(i recommend a fancier gin for this cause you’ll want it to be real smooth. i used hendrick’s.)
irish canadian coffee
brew some coffee and let it cool a bit. make a whisky syrup by combining half a cup of brown sugar, a quarter cup of rye, an eighth cup of water, and a splash of vanilla extract in a pot on medium heat. let it cool a bit too. put about six ice cubes in a mason jar. fill up about half way with the cooled coffee. add as much dairy (or whatever) as you want. add a little splash of rye, and a generous glug of your whisky syrup. put lid on jar and shake until combined.

vanilla orange bourbon smash.
make a simple syrup by combining half a cup brown sugar, half a cup water, and a splash of vanilla extract in a pot on medium heat. turn off heat once combined. wet a glass with a wedge of orange and rim with sugar mixed with chili powder. add ice to the glass, topped with bitters, the juice of half an orange, and a measure and a half of bourbon. drink straight or top with soda.
canadian krupnik.
put a cup of water in a pot with a splash of vanilla extract, two cinnamon sticks, a teaspoon of nutmeg, twelve cloves, a peeled and sliced thumb-sized piece of ginger, and two tablespoons of peppercorns. bring to a boil, take off the heat, and add the rind of an orange and a lemon. cover and put the spice mixture to the side. in a different pot, combine two cups of maple syrup and one cup of water. heat and stir to just under boiling. to a much bigger pot, completely away from heat, combine the spice water, the maple syrup water, and four cups of rye. cover (with saran wrap and a lid) and leave overnight. in the morning, strain the mixture through a few layers of cheesecloth and a sieve, and put into a bottle or a jar.

(it’s kind of like a cold hot toddy. so just a toddy.)
winter white russian.
make a spiced simple syrup by combining half a cup water, half a cup sugar, three cloves, and a cinnamon stick on the stove on medium heat. once combined, take it off the heat and let it sit. store with spices still in syrup. to a glass with ice, add a measure of kahlua, half a measure of vodka, and half a measure of spiced syrup. to with milk and stir. garnish with a cinnamon stick.
