It is sometime between afternoon tea and dinner. This made me think about the high tea we had in Sassafras last weekend. Sometimes, I wish that high tea tiers came with two levels of savouries and one level of sweets. I am a sweet tooth but man, that is a lot of sweet stuff to take in! I loved the loose leaf English Breakfast tea served here (strong with a great flavour!) and the beautiful teapot it came in. (Not pictured) It was tres adorable! In the end, I couldn't handle all the cakes, I ate my croissant and struggle through the second tier. I loved whipping up this super easy and delicious Lemon Coconut Greek Yogurt Loaf using my leftover lemons, yogurt and dessicated coconut. Perfect crumb texture, still retains that lovely balance of moisture and lightness. The perfect tea loaf slice served warm to go with tea. Got the seal of approval from mum, bro and sis who tasted it today. I ate my slice with some cream cheese frosting left over from the cinnamon rolls. ☺️👏🏻

B L U E B E R R Y. .P A N C A K E S. 🥞🥞 I absolutely love it when 🤰🏻food inspiration strikes for breakfast whilst still in bed. Even more of a win when you confirm after a few careful trials that you are no longer allergic to blueberries (no rash! Yay!! Thank you naturopath/pregnancy?!) To celebrate, I made us each a stack of homemade fluffy blueberry pancakes. These pancakes are made with the usual pancake suspects with a few small twists. I added Greek yogurt, 3 eggs separated and whipped up the egg whites, gently folding them into the batter to give it even more of a fluffy texture. So good! Just made these delicious healthier version of pancakes for breakfast this morning. Tastes like pancakes and even has a bit of fluffy/bounce to it. Passed the husband taste test which is 👍👏🏻. Recipe below: #pancakes #health #healthyoption #glutenfree #delicious #breakfast INGREDIENTS--- 2 x medium sized ripe bananas 1/2 - cup of oats (rolled is good - I use a mix of rolled oats, puffed millet and quinoa) 2 x large eggs 1/2 teaspoon baking powder 1 tbsp of LSA mix (Linseed, Sunflower & Almond) 2 tbsp of desiccated coconut 1 heaped tsp of cinnamon 1 tsp of vanilla bean essence (or omit, doesn't really matter, I just like the vanilla scent) TOPPINGS--- Dollop of natural yogurt to serve Pure maple syrup and fruit of choice to serve METHOD--- Pop all ingredients into blender. Blend till smooth and let sit. Allow mixture to stand for at least 10-15mins before cooking to allow baking powder to do its magic. Use a small amount of coconut oil on pan to cook on a non-stick pan. Pop two tablespoons worth of batter per pancake to get about a palm sized pancake. (Because there isn't wheat to bind the mix, avoid making giant sized ones.) Cook on both sides till golden brown (same rule as normal pancakes - wait for bubbles to appear on the wet batter side). Serve with fruit of choice and if you like - yogurt/cream/ice cream with pure maple syrup. I find the pancakes good enough to eat as is without anything added. Sprinkle extra cinnamon if you are cinnamon fan like me. ENJOY!

Great catch up with a Higher Ground brunch that did not disappoint. Completely in love with this Ricotta hotcake with maple syrup, seeds and grains, cream, seasonal fruit and flowers. Finally a hot cake that is pretty to look at but tastes amazing. It is a huge serve so a great sharing plate with friends. @anafmcardoso and I both admitted we could have had the entire plate ourselves 🙋🏻. We also had the Bircher which was refreshing and delicious. Can't wait to go back. (at Higher Ground Melbourne)
