Ingredients: 8 oz linguine. 1 bunch asparagus, trimmed and cut into 1-inch pieces. 2 tablespoons olive oil, divided. 3 cloves garlic, minced. 1/2 cup panko breadcrumbs. Zest and juice of 1 lemon. Salt and pepper to taste. Grated Parmesan cheese for serving.
Instructions: Cook linguine according to package instructions. In the last 3 minutes of cooking, add asparagus to the pot. Drain and set aside. In a skillet, heat 1 tablespoon olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add panko breadcrumbs to the skillet and toast until golden brown, stirring frequently, about 3-4 minutes. Remove from heat and set aside.
