This vegan quesadilla is easy to make and tastes great. It can be eaten for lunch or dinner. It tastes great and fills you up because it has vegan cheese, black beans, and corn in it.
Ingredients: 1/2 cup vegan cheese, shredded. 1/2 cup black beans, drained and rinsed. 1/4 cup corn kernels, canned or frozen. 2 large flour tortillas. 1/4 cup salsa. 1/4 avocado, sliced optional.
Instructions: Preheat a non-stick skillet over medium heat. Place one tortilla in the skillet and sprinkle half of the vegan cheese evenly over the tortilla. Spread the black beans and corn evenly over the cheese. Sprinkle the remaining cheese over the beans and corn. Place the second tortilla on top and press down gently. Cook for 3-4 minutes, or until the bottom tortilla is golden brown. Carefully flip the quesadilla and cook for an additional 2-3 minutes, or until the other side is golden brown and the cheese is melted. Remove from heat and let cool slightly before slicing into wedges. Serve with salsa and sliced avocado, if desired.
