Great spice cake recipe, made it yesterday as 2 8″ rounds + some cupcakes. Apple compote filling and whipped cream cheese frosting.
Made this frittata tonite with asparagus and bacon. Roommates said we had nothing in the fridge…pfft.

Chicken & Vegetable Soup with a Fresh White Bread Loaf
Really trying to get my bread game on. Made a large white loaf using a recipe from BH&G. It was a good recipe, I think I just need more practice finding the sweet spot of kneading versus over-working the dough. Crust was nice and crusty~
Soup was just thrown together with what I had on hand. Chicken, broth, S&P, vegetables, cannellini beans for some creaminess. thyme, bay leaf.
Baked Huevoes Rancheros Nachos
Adapted this recipe from foodandwine.com, think I made the chip layer too thick but it tasted really good. Had to add 5 minutes to bake time for the egg. Since not making the individual plates I think. Wanted to make something breakfasty, others wanted Mexican- so this happened. I really liked it but I think eggs and chips were to strange for the boys.
Used smoked bacon, orange bell pepper, red onion, chunky Verde sauce (instead of the tomato base), Mexi-mix cheese. For sauteing the veggies I used the bacon fat oil.
Hasselback Sweet Potatoes
Baked at 425F for 50 minutes. With Butter and Sea Salt.
Kimchi Fried Rice
It’s fried rice with kimchi in it. Made really lazily- with just egg and scallions.

Made some of this today... minus the garlic and very spicy. Trying to learn more ways of using these lovely little fish. Other than cat treats. Was quite yummy and the boys actually tried them out. Now the whole batch is all gone. Think I found a new side dish to make on dim sum nights.
Simple and quick dessert to make. In fact I ‘whipped’ this up an hour before dinner due to a last minute guest. Due to house diets, used sugar-free and lactose-free options. (Cool Whip has milk in it now btw) I make this at least once a month. Everyone loves it~
Posting the recipe as sometimes it’s hard to find if recipes work with the sugar-free gelatin packs. Fruit can be added if you like, but serve that day due to the water content of the fruit.
Sugar-free Jell-o Mousse
Sugar-free orange Jell-o, large pack.
1 tub of Whipped Topping, thawed.
3 c. Water
Ice.
In a large glass mixing bowl, dissolve the gelatin with 1.5-c boiled water. About 2 minutes. Use a 2 cup liquid measure, fill with 1 c. cold water. Add enough ice to fill up to 2 cups volume. Stir into the gelatin mix for 3 minutes. Ice will mostly melt, scoop out any that hasn’t. Mixture will be soft set at this point. Whisk in the tub of whipped topping. Cover and chill till fully set (2 hours).
*Or if in a hurry- cover and put in freezer for 30 minutes then fridge til ready to serve.
Hong-Kong Style Dan Tat
Tried out another recipe for dan tat. The directions could be tweaked. I’m not sure about the amount of sugar water it used. I only used half of the custard mixture for 12 tarts. Think more egg too, the flavor was so diluted. The crust came out almost like a shortbread. And it didn’t cook all the way through. Think rolled out thinner would be better.
Won’t be making this one again.
Dinner Menu Idea:
Vegetable Rolls: Romaine Lettuce, Spinach, Carrots, Daikon, Cucumber, and Avocado.
Gyoza: Pork, Nappa Cabbage, Daikon, Spices, Soy.
Teriyaki Trout: Pan seared skin side, finished with broiling.
Short-grained Rice.
Strawberry Rhubarb Crisp.
Here’s the recipe I use for crisps- simple and delicious. Adjust sugar to sourness of fruit by not dumping it all in at once. Halved the recipe, used Splenda for 1 half of the fruit part (for the diabetic in the house). Used quick oats, no flour as I was trying to keep it gluten free. And it makes it super cruspy. 8)
Chocolate Chip Bread Crust Pudding
So I had a lot of crusts from when I made lady sandwiches. Felt a waste tossing them. Bread pudding came to mind. It turned out lovely, since it was all crusts it was crispy. The use of rye and white breads gave a nice texture with the white bread absorbing more liquid. Use any recipe you like. It really depends on personal preference. I like less eggy (custardy) and crisp but no butter.
Here I filled a shallow pie pan with the crusts, leaving them in long strips. Covered and soaked in a mixture of 4% milk, vanilla, cardamom, cinnamon, 1 egg, brown sugar. Topped with chocolate chips to entice the boys to try it. Apparently soggy bread is off-putting. Baked @325F for an hour.
Had lots of company over few days ago and made 2 meals of sandwiches. First one was more elegant, 2-bite sized with the crusts cut off for well, a bunch of ladies. Sadly, they were eaten before I recalled to take a pic. Above is the second set for dinner. Didn’t bother going crustless as it was mostly guys.

Stuffed Shells for dinner~
I tried a fancy recipe from Giada De Laurentiis. Minus the mint as I do not like the flavor of fresh mint. Not sure I could taste the pancetta though so won’t be adding that again. I did have to use 2 pans as only about 30 shells fit into the 12x9 pan. This was so yummy and my first time stuffing shells. Turned out really well so definitely recommend.
Spam and Cheese Individual Frittatas with Drop Biscuits
Tonight’s meal was quickly put together as I forgot to thaw meat. An hour total for prep and baking. Made the biscuits first then let the oven cool a bit for the frittatas.
I used this recipe as a guideline for baking the frittatas... with spam, mexi-cheese mix, lactose-free 2% milk, and sauteed brown mushrooms with a couple dashes of cumin. They felt a bit heavy, I think less milk next time. Or maybe add in an extra egg white. The drop biscuits were the Biscuits Supreme recipe from my trusty BH&G cookbook- using the shortening + butter. They always come out nice and fluffy with a slight crunchy outside from the butter, mmm.
Sandwich Baguettes
I forgot to throw this up with the banh mi post. Tried my hand at french bread for sandwiches. Most I am proud to say turned out in baguette shape. They rose during baking more than I had thought they would.
