Homemade chili
This recipe should make quite a few servings. I don't know the exact amount, just that it fits in my biggest pot. when there is chili in the house I usually will eat that for all my meals and it'll last quite a few days, even with one other person eating it. My guess would be at least 15-20 servings.
One thing I will say about this is that you can't make it in an hour. This batch took me about 3 days to make and prepare.
Ingredients:
1 lb. of Ground beef
2-3 other meats
For this batch I used beef strips, beef smoked sausage cut into little pieces and a few strips of bacon cut into pieces as well
About 32 ounces of tomato sauce and tomato soup
1 bag of red kidney beans
2 green bell peppers chopped
1 big onion chopped
2 jalapenos
garlic
cumin
coriander
salt
cinnamon
Ok so first thing you gotta do: preparing the beans. You'll have to rinse the beans ( I put them in a smaller pot). after you rinse them they'll need to soak in about 4 cups of water...for about 8 hours. after they soak you need to drain the water and put another 3 cups into the pot. now the beans will need to cook for about an hour, drain them again and set them aside.
In the big pot you'll need to brown your beef and other meats. I put the onions in at this point. Once that's done add the tomato sauce and stir. Keep the heat on high for now. Add in the peppers, jalapenos, and garlic. I wanted small pieces, so I threw the veggies in a food processor. add the bacon and beans. Stir the sauce in real good.
This is where I added the spices. I wish I could give you a good measurement of how much I used, probably a little under a tablespoon for each if not more, it was a game of "this looks like enough". stir.
I let my chili cook for probably a total of about 10 hours on LOW heat (Like the lowest setting you can get). I did 4 hours one day before letting it cool and putting in the fridge before I went to bed. today It cooked for about 5 hours before I alternated between cooking and cooling. you don't have to stir it constantly(Thankfully) but often. every time I or my roommate walked into the kitchen the chili would get stirred.
I had some after cooking for 10 hours and it was good. it should be stronger tomorrow when the spices have settled some more.
