Italian Sausage Frittata (Gluten Free/ Wheat Free) - 4 Thick GF Italian sausages - 4 eggs - ½ cup almond milk (any type of milk you want to use) - 1 corn – Kernels only (shave the corn off the cob - ½ cup cherry tomatoes - 2 tbsp cottage cheese - 1 tbsp shaved parmesan cheese Preheat oven to 200 degrees. On a medium heat frypan fry the Italian sausages. Whilst starting to cook put the eggs, almond milk and some salt/pepper in a bowl and whisk until well combined. Set aside. Once the sausages are lightly sealed cut them in half lengthways and squash that side on the pan down to cook the inside of the sausage. Add the corn and tomatoes to the pan and continue to sauté until the sausage is cooked. In a small baking dish add the corn, tomatoes and sausages. Then cover with the egg mixture and drop dollops of cottage cheese around the dish. Top with parmesan, salt and pepper and then bake for 15 minutes or until the egg is no longer runny. I like to put the grill on at the end of brown the top then servce on its own or with some crusty bread.
LEFTOVER VEGGIE CURRY : Sauté onion, once translucent add large pieces of 1 Sweet Potato & 1 Carrot .. After 5 minutes add 1 tsp fennel seeds, 1/2 tsp of paprika, cayenne pepper and cinnamon. Stir well and cook for 5 minutes. Add other veggies you have! I added Asparagus, Broccoli & Capsicum and sauté for 2 more minutes. Add can of tomatoes and 1 glass of water. Turn down low and put lid on for 20 minutes. Then stir in some coconut milk to your taste. 5 more minutes and serve with some coriander. Boom!!!!

EASIEST Donuts (Paleo, Gluten, Wheat, Diary and Sugar free!) (30 minutes and eat :)) 2 cups almond meal 3/4 teaspoon baking soda 1/2 teaspoon salt 3 tablespoons coconut oil 3 tablespoons honey or rice malt syrup 1/2 teaspoon vanilla extract 3 teaspoons apple cider vinegar 3 eggs -Preheat oven to 180C -Melt coconut oil and honey in a small microwave safe bowl for 30 sec -Mix all ingredients together in a large mixing bowl -Divide batter evenly between 12 moulds in a donut pan (I put the mixture in a zip lock bag and cut a corner to make this easier) -Bake for 15 minutes/ or until browned and allow the to cool before removing from the pan. Once cooled loosen the outside and centre using a chopstick and they will come out easier. Nut Butter Cinnamon Glaze 2 tablespoons almond butter (or any other nut butter) 1 tablespoon honey 1 tablespoon coconut oil 1/2 teaspoon Vanilla extract 1/4 teaspoon cinnamon -Melt all ingredients together in a microwave-safe bowl for 30 sec and extra 10 sec if needed -When everything is melted, whisk until it's super smooth -When donuts are completely cooled, dip them in halfway into the glaze Classic Cinnamon Coconut Sugar 3 tbsp coconut nut sugar 2 tbsp cinnamon 1 tbsp coconut oil - Combine sugar and cinnamon in a bowl - Melt coconut oil in microwave bowl for 30 sec - Brush donut and then sprinkle sugar mix over EAT!!!!!!!
