Here’s my current read on a few of them:
As a dad, he would be equally affectionate regardless of gender. He’d start off extremely anxious, consequently acting more scatterbrained and overcompensating with both extreme emotional elasticity and rigid physical limitations (i.e. his kids can think and speak however they like, but they’re not leaving his side unless the mother or Az-Harto step in). Eventually he'd mellow out and be less likely to hover once his kids can fend for themselves.
Given his own experiences with various forms of punishment, Ratbag struggles immensely when it comes to disciplining others. He much prefers to be the type of dad who tells the best/worst jokes, knows the coolest obscure places to visit, and shares the most hyperspecific life hacks you’ll never forget.
Ratbag would thrive and have more stable relationships with his kids once they hit the human equivalent of ~16-18 years old or have their first identity crisis. Here his top three lessons to his kids would essentially be teaching them how to (1) keep faking it until you make it, (2) eat shit and bounce back with a smile, and (3) make long-term friends fast as an adult.
He values competency and consistency over pretty much anything else in his spawn (and, yes, he 100% calls them his "spawn"). Being an ambitious workaholic, Zog wouldn't be a heavily present father figure unless his children share his special interests or at least show some aptitude for magic. Also, he's practically impossible to please and would be notorious for picking favorites.
Nevertheless, he's the most protective dad on this list in practice and perhaps the only one capable of providing a proper education by our modern standards (homeschooling is a no-brainer here). He can and will have assigned undead bodyguards for his children. Because of this, his spawn would typically have closer bonds with various acolytes of his that act as caretakers and tutors rather than Zog himself.
Due to his immortality, Zog has no inherent need for his offspring to carry on his legacy. If anything, he'd prefer that they remain less successful than him in the family business and would monitor them all closely, paranoid they might one day overthrow him. For this reason, he most likely wouldn't have children to begin with unless it was for a biological experiment.
He would view any child of his as a treasure he doesn't deserve, but without a doubt, Akoth is a girl dad. He'd be fairly soft-spoken as a parent, but also emotionally intelligent and principled in his restraint. He's the kind of dad that never gets mad, just disappointed and able to express that as constructive criticism that cuts straight to the heart.
He also knows when to push issues or otherwise let sleeping dogs lie. His kids listen to him not because he's strong (he is), but because he values mutual transparency and trust. Generally, he seems like a terrible liar. In Mordor, that would normally be a crutch, but under the Bright Lord's reign, it means job security.
Probably the best/most likely uruk on this list to make it as a single parent. After losing his blood brother and being made an Overlord by Talion, he's accustomed to managing domestics while grief-stricken.
