Cheezy Broccoli and Noodles

I mixed some broccoli and kelp noodles with a cheese sauce I made the other day, it turned out pretty great. The bell pepper and sun dried tomatoes were a good mix in the sauce. I think this will be one of my go tos.

I like to chop my salad pieces pretty small, chiffonade style. Add Lemon Juice and massage the greens a good bit to make them a little tender. You can add in a little oil if you'd like to help the process but it's not necessary. Slice the avacado and garnish, add chipotle seasoning.

So, I would like to add in a little segment here to help organize my eating habits. I want to plan my meals ahead of time in order to help prepare myself because I am hopefully starting a new full time job here soon, and I don't want to fall off the wagon. I have always loved to add creativity and excitement to my food, and sort of go with the wind... but I feel like I need more control over it all. I'm not sure exactly how this is going to look or turn out, so you guys can follow along with my experiment. Here is the menu for today though.... I adapted a recipe from here. This was super great! I need to find a better curry powder, because mine had salt in it, otherwise this would have been completely salt free but entirely flavorful. The peppers and apples make a perfect combination. I've been a little absentee lately because I've been trying to detox with nothing but soup and juices, so it's been super repetitive, but sometimes I just feel full of crap and need to get it out of me. So super duper curry soup recipe to the rescue... here goes:
Red Pepper Curry Soup
Ingredients
1 1/2 Red Bell Peppers (any other colors work fine, but may not be as pretty)
1/2 Apple, peeled
1/2 Avocado
A few basil leaves (save extra for garnish)
1 Green Onion
1 Tbsp Curry Powder
1 Tsp Onion Powder
1 Tsp Garlic Powder
1 Tsp Cayenne
Water
Combine it all in the blender and add enough water to desired consistency. This comes out super creamy because of the avocado and super flavorful because of the pepper. I highly recommend it!

I tried out this recipe, except I used a raisin and walnut crust. I also used a regular cupcake pan, because that's what I had and they came out great!

Combine raisins and walnuts into processor until squishy and moldable. Mold into pan of choice and freeze. Blend dates with a couple tablespoons of the soaking water. Spoon into shells and top with pecans, freeze for about 1/2 an hour.

I wanted something to eat with the chips I made the other day. Sunflower seeds make a great base for dips and spreads. You could eat this with veggies or stuff it into a pepper.

Combine everything except for the cilantro into a blender with water and blend to desired consistency. Add cilantro and pulse to chop.

Just a quick side rant today, I found this app a few months ago and it has been spectacular to have around!! You can actually scan the barcode with your smart phone or tablet and it will spit back all the real nutrition information, as well as any circulating rumors and terrible things it might include. It even gives it a rating compared to other similar foods, and suggests healthier options. Granted, most of the food I eat is raw, but being reminded what is in certain store bought, processed foods is really nice. Especially if you are new to the raw vegan lifestyle. Here is a video with more information. It's a terrific resource to get yourself educated! There is so much hype out there, and so much misinformation even about raw foods.. don't be a sheep, do your homework for yourself.

Add Chard, beet & sprouts to the blender with water and blend until juiced. Add all other ingredients except chia seeds and fill with ice, blend to smoothie. Add in chia seeds.

Veggie Wrap with Sunflower Ranch Dressing

Cracked Pepper
Combine all ingredients in a blender except for the dill & cracked pepper. Once the dressing reaches your desired consistency add dill and cracked pepper and pulse until distributed evenly.

Well, in making the chocolate covered cherries, I couldn't help but use the leftover chocolate for some peanut butter cups.
Peanut Butter Cups

Peanut Butter (or any nut butter)
Pinch of Salt
Pinch of Nutritional Yeast

Combine the ingredients for the peanut butter and sit aside.

Warm the coconut oil to room temperature, until it becomes liquid. Mix in remaining ingredients. This is where I added it to a squeeze bottle to make it super mess free... spooning tends to get messy. (that's what she said) If you are using a mold the trick is to put a little bit of chocolate in the top of the mold and freeze it first for about ten minutes. Then add your peanut butter and fill the remaining of the mold with chocolate. These will be finished pretty quickly, half an hour tops, but I couldn't wait that long!

I absolutely love your blog! I was just wondering and might sound really silly but whats agave? And what would be your favourite recipe you've made? Xo
No question is a silly question! Agave is generally in a syrup form and is a natural sweetener derived from an Agave cactus plant. There is a little bit of controversy out there about how much healthier it is than refined white sugar, so I try not to rely on it as a sweetener. But in things like candy, that are an occasional treat, I think it's just fine. You could also use stevia, maple syrup, cane sugar or even honey (a lot of people don't agree this is vegan). In a recipe like the chocolate you could easily substitute the agave with maple syrup or honey if you needed to. Here is an article on the actual glycemic values vs. sugar and a little more about the plant. I hope this helps! :D
Ohhh my favorite recipe, that is hard!! I think I will pick three different ones. First, my favorite recipe that I rely on a lot because it is easy when I am feeling lazy and tastes great is Corn Chowder. My favorite recipe to impress friends is Strawberry Cheesecake. But I think my all time favorite recipe, the one I love to snack on all the time is Kale Chips. If you have ever tried the store bought kind, they do not hold up to making them yourself.

So I bought this fantastic new cherry pitter for only $5 from HEB, and what else can I do besides eat them right away, well cover them in chocolate of course!! I think these were better than the real thing. I didn't feel like I needed to brush my teeth twelve times when I finished them. So, when I searched around the internet for a chocolate covered cherry recipe, I could not find a raw vegan one! I was amazed!! So I conjured these little fellows up and voila, here you are.
Raw Vegan Chocolate Covered Cherries
Ingredients
Cherries
Pitted Cherries
Agave
Vanilla Paste
Combine the ingredients for the cherries and sit aside.

So there was an extra avocado and so was born this green soup. I think next time I will add in some green tomatoes, because it reminded me oh so much of a raw salsa that HEB sells and I can never get enough of and sometimes eat by the spoonful. YUM!
