Quinoa + Vegetable Medley
RECIPE:
Cook quinoa according to package instructions, only use vegetable broth in place of water. (I like to make homemade vegetable broth with my vegetable scraps, here's a great blog post on how to do that.)
While your quinoa is cooking, sweat your garlic and onions in delicious extra virgin olive oil. Be picky about your EVOO! I usually look for a shade of green, a strong peppery after taste and I gravitate towards those made and packaged in southern Italy.
Then add the rest of your veggies. I use diced shiitake mushrooms, portobello mushrooms, and zucchini. Sometimes I"ll add spinach or tuscan kale, too. Add salt + pepper to taste.
While the veggies are cooking, cut your cherry tomatoes in half or in quarters.
When the vegetables and quinoa are cooked, mix them together and add the chopped cherry tomatoes and some of your favorite chopped fresh herbs and cook for a few more minutes. My favorite herbs to use are thyme, basil and rosemary.
Plate your meal and garnished with more herbs.

Garlic Ginger Broccoli + Flax Tempeh With Cold Sesame Noodles
RECIPE:
Garlic Ginger Broccoli + Flax Tempeh
Heat some sesame oil in a pan and sauté a 1/2 bulb of chopped garlic.
Add tempeh, cut to your liking.
Chop 2 inches of ginger and add to pan.
Add soy sauce and broccoli and cover until broccoli is cooked.

Pasta Primavera + Spinach Pesto Veggie Sausage + Vegan “parmesan chips”
RECIPE:
Pasta
Boil water for the pasta with a pinch of salt and dab of extra virgin olive oil. Add pasta when water is at a rapid boil.
Sauté some garlic and sliced veggie sausage, then set aside.
In another pan, or after wiping down your veggie sausage pan, sauté zucchini in EVOO until lightly browned, then add a cubed tomato and let the water from the veggies mix together. Then add peas and cook for a few more minutes.
Drain the pasta and add into the zucchini pan, then add the sausage and let the flavors mix for a few minutes.
Vegan Parmesan Chip
In a bowl mix 1/4 cup nutritional yeast 1/8 gluten-free Italian bread crumbs, 1 tbs of garlic powder, 2 tbs soy milk and salt to taste. Mix them up, let the ingredients sit for 5 minutes, mix again, then spoon flat in a pan and sauté until golden brown.

RECIPE:
Mix cannellini beans, cubed tomato, chopped garlic and basil with extra virgin olive oil in a bowl.
Add salt and pepper to taste.
Spoon onto a bread of your choice.

RECIPE:
Cube tomatoes, yellow pepper, and onions.
Chop garlic, to taste.
Cook all ingredients in a non-stick pan with black soy beans, spinach, turmeric, cayenne pepper, and cracked pepper to taste.
