Honey Balsamic Glazed Salmon
I've never been what you would call a healthy eater. :( I've been lucky in that I have pretty fast metabolism but after turning 25, I can feel it slowly catching up to me. I'm going to try to eat healthier from now on.
This is a simple and delicious salmon recipe that I turn to for a fast, healthy dinner. This week, I paired it with asparagus. I'll post the recipe for that in another post.
Salmon cooks pretty fast so keep that in mind. Think, opposite of chicken...
ginger or garlic (optional)
Mix a few spoonfuls of honey and balsamic vinegar together in a small bowl. Adjust the vinegar/honey ratio to how sweet or sour you like it. Make enough glaze to coat the 2 filets and a little extra if you want more after cooking it.
Put the salmon (skin side down) in an oven safe tray. I've done it with metal cake trays and cookie sheets but my favorite is a small glass tray. I think it cooks better and the heat doesn't dry it out as much.
Pour the glaze over salmon and slip a little bit underneath. I do that instead of using cooking spray and I've never had issues with it.
Turn on the broiler of your oven (That's the drawer thing at the bottom of your oven) MAKE SURE YOU ARE NOT STORING ANYTHING IN THERE THAT COULD BE BURNT. That's happened to people I know...
The broiler basically sprays fire on the top of what you are cooking. You don't have to preheat it. Put the tray of salmon in the broiler and check on it in 5 min is this is your first time cooking it. If you are cooking for 2, the salmon shouldn't take more than 15-20 mins to cook. If the top of the salmon starts to blacken, put a piece of foil on top of the tray but don't do that at the beginning cause you want it to crisp a little bit.
You can also do this in the oven instead of the broiler. I recommend 450 degrees.
That's it, take it out and check it. Put it on a plate and nom on it!
