Speaking of jokes, here's my favorite blind joke (heard on Discord):
Two guys are at a urinal and one notices the other is blind.
"Hey man, can I help you?" says the first guy.
"Sure," the blind guy says. "Can you hold my stick?"
The sighted man reaches for the guy's white cane.
"No, the big one."
Matt: *gazing in the general direction of a painting*
The artist of a painting: hey enjoying my painting?
Matt: sure
Artist: what do you think?
Matt: 0/10 it’s not ADA compliant

i would like to know what are your thoughts on non-blind people making blind jokes (for example, people who write atla fanfic and make toph say blind jokes or add some funny situations as we see on the show, but the person writing it isnt blind?)
The feelings are mixed. In real life, I generally don't like the blind jokes sighted people make because they are usually unoriginal and I've heard them a hundred times already.
In atla fanfic, I generally enjoy when writers throw in a blind joke for Toph because that is her being in character. If she didn't make jokes about her blindness, she would be noticeably OOC. However, the ones I like are convenient one-liners, toss them into dialogue like spices into a soup. They work with the dialogue and flow, there's a high chance you'll read right past them for a half second before realizing who just said that in what context.
When writers deviate from that recipe the show writers so beautifully crafted, then it feels a little forced. Like if they had to create this elaborate set up for this one joke that sounds funny in their head, it probably should have stayed in their head.
With OCs, then I think blind jokes are something you should get a bind person's opinion on. Have them read the page and tell you if it's funny or a flop or offensive.
If other blind people hate those jokes, that is absolutely their right, and I respect that. And if they love those jokes, that is their right and I respect it too.
If you get someone in your comments saying "this joke is actually hurtful" then you should take their advice to heart, ask any questions you need to find the solution, and make the change necessary.
