Ingredients: 8 oz 225g spaghetti. 1/2 lb 225g cooked shrimp, peeled and deveined. 1 cup cherry tomatoes, halved. 1/2 cup black olives, sliced. 1/4 cup red onion, finely chopped. 1/4 cup fresh basil leaves, chopped. 1/4 cup grated Parmesan cheese. 3 tablespoons extra-virgin olive oil. 2 tablespoons balsamic vinegar. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: Cook the spaghetti according to package instructions until al dente. Drain and rinse with cold water to cool it down. In a large bowl, combine the cooked spaghetti, cooked shrimp, cherry tomatoes, black olives, red onion, and fresh basil. In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, minced garlic, salt, and pepper to make the dressing. Pour the dressing over the salad and toss everything together until well coated. Sprinkle grated Parmesan cheese on top and gently toss again.
