This Morning Glory Pasta is a delicious and nutritious way to start your day. It's packed with protein from the eggs and Parmesan cheese, and loaded with fresh vegetables for a burst of flavor. Quick and easy to make, it's the perfect breakfast or brunch option to conquer the most important meal of the day.
Ingredients: 200g spaghetti. 2 eggs. 1/4 cup grated Parmesan cheese. 1 tablespoon olive oil. 2 cloves garlic, minced. 1 cup cherry tomatoes, halved. 1 cup spinach leaves. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Follow the directions on the package to cook the spaghetti until it is al dente. Remove the water and set it aside. Add eggs and Parmesan cheese to a bowl and mix them together using a whisk. Put away. Set a pan on medium heat and add the olive oil. Mix in the garlic and cook until it smells good. Put cherry tomatoes in the pan and cook for about two to three minutes, until they start to get soft. The cooked spaghetti and spinach leaves should be mixed in. Toss the spinach around until it softens. Add the egg and cheese mix to the pasta and mix well. Throw it all together quickly until the eggs are cooked and the pasta is well covered. Add pepper and salt to taste. Add fresh basil leaves on top and serve hot.
