Star Trek character spinoffs I would personally like to see:

Garak and Bashir. That's it that's the premise, they're together and in love and it's just. Well it's happy but also they are themselves so you know it's going to be worth watching to see what the actual fuck kind of situation they're going to get into next.

Data and Geordi hanging out and having more adventures. Not really all that different from the canon I just want to see more.

Hemmer & Uhura mentor/mentee / dad from work/daughter from work b-plot level hijinks because he's 100% ok!!! (coping). Series also features Pelia & Scotty periodically getting into and out of moderately illegal misadventures bc it's really not their fault that I have trouble enjoying them in canon but it would be easier to without certain writing choices having occurred.

Neelix hosting a cooking show, sometimes with guests. It is chaos and it is glorious

7 of 9 gets small weird pets and then goes about making wonderful perfectly contained environments for them as per this post

Dr. Phlox science vlog. Kind of like 7 of 9's but with more medical things and more chaos
